It's finally Friday. Yay! Here are six yummy Desserts to help you through the weekend, including a Banana Cream Pie No-Churn Ice Cream and Cinnamon Baked Doughnuts. Enjoy!

MILLIONAIRE BARS

This yumminess is from Sarah Brekke at allrecipes, and begins, "These millionaire bars are no-bake chocolate squares featuring crispy cereal, with a salty edge from roasted peanuts, but you could swap in another nut if you prefer."

Ingredients

6 tablespoons heavy cream

1 tablespoon butter

1 pound vanilla caramels

2-1/2 cups crispy rice cereal

1 cup chopped salted roasted peanuts

1 (11.5 ounce) package milk chocolate chips

Directions

Line a 9x9-inch square baking pan with foil; grease well. Heat cream and butter in a medium saucepan over low heat until just steaming. Add caramels and continue cooking, stirring frequently, until melted and smooth. Stir in cereal and peanuts. Working quickly, spread mixture evenly in prepared pan.

Microwave chocolate chips in a bowl on High, stirring every 30 seconds, until smooth, 1 to 2 minutes. Spread over caramel slab. Chill until set, about 2 hours; bars will keep, refrigerated, for up to 5 days.

PEANUT BUTTER CHOCOLATE PRETZEL PIE

This yumminess is from Nicole McLaughlin at allrecipes. For this recipe, Nicole wrote, "This peanut butter chocolate pretzel pie has a lush cream cheese and peanut butter layer atop a lightly baked pretzel crust, finished layers of chocolate pudding, whipped topping, and crushed chocolate peanut butter candy." My response? Yum!!!

Ingredients

2-1/4 cups crushed pretzels

1/4 cup white sugar

3/4 cup butter, melted

2 (8 ounce) packages cream cheese, softened

1 cup creamy peanut butter

1-1/2 cups confectioner's sugar

1 teaspoon vanilla extract

16 ounces whipped topping

1 (5.9 ounce) package instant chocolate pudding

2-1/2 cups cold milk

1/2 cup chopped peanut butter cups and coated peanut butter candies, such as Reese’s Pieces®, or as needed for topping

Directions

Preheat the oven to 350 degrees F (180 degrees C). Stir pretzels, sugar, and melted butter together and press lightly into a 9x13-inch baking dish.

Bake in the preheated oven just until fragrant, about 10 minutes. Let cool to room temperature, about 20 minutes.

Beat cream cheese, peanut butter, confectioner's sugar, and vanilla together with an electric mixer until well blended, light, and fluffy. Fold in 2-1/2 cups whipped topping.

Spread peanut butter mixture evenly over cooled crust.

Whisk together chocolate pudding mix and milk until smooth, well combined, and slightly thickened.

Carefully spread chocolate pudding mixture over peanut butter layer, taking care not to mix layers together. Top with remaining whipped topping.

Sprinkle with chopped candies and refrigerate for at least 4 hours.

KEY LIME CREAM PIE

This is from The New York Times cooking e-newsletter’s Melissa Clark, and post on The TODAY Show’s website. The recipe begins, “Key lime pies are an iconic American dessert. But they're not always so easy to make. They've gotta be decadent but light, cool and creamy ... and this one has it all!

Technique tip: Be sure to allow 2 hours after the pie is cooked to chill. The pie can be made ahead of time and left in the refrigerator up to one day.”

Ingredients

1-3/4 cups graham cracker crumbs (from about 11-12 sheets of crackers)

6 tablespoons unsalted butter, melted

2 tablespoons sugar

4 large egg yolks

One (14-ounce) can sweetened condensed milk

2 teaspoons finely grated lime zest

2/3 cup fresh Key lime juice or regular lime juice (from 5 to 6 limes)

Pinch of fine sea salt

1 cup heavy cream

1 tablespoon confectioners' sugar

1 lime (optional, for garnish)

Preparation

Preheat oven to 350 degrees and place a rack in the center of the oven. In a large bowl, stir together graham cracker crumbs, butter and sugar. Transfer to a 9-inch pie plate and press crumb mixture into an even layer on the bottom and up the sides.

Place pie plate on a rimmed baking sheet and transfer to oven. Bake until golden brown, about 10 to 12 minutes. Transfer to a wire rack to cool.

Meanwhile, in the bowl of an electric mixer, whisk egg yolks until pale and fluffy, about 5 minutes. Turn the mixer down to low and slowly add the condensed milk, scraping sides if needed. Whisk in lime zest and juice until just combined.

Scrape the mixture into cooled pie shell, then return to oven and bake until filling has just set, 15 to 20 minutes. Transfer to a wire rack to cool to room temperature, then refrigerate until completely chilled, at least 2 hours and up to one day.

Just before serving, in the bowl of an electric mixer set with the whisk attachment, beat together cream and confectioners sugar until thick and fluffy. Dollop whipped cream on slices of the cooled pie. If you’d like, grate the zest from a lime over the whipped cream for a gorgeous green accent. Serve.

GINGERBREAD

This recipe is from a no-longer-remembered emailing list. I have a sneaking suspicion that whoever sent it to the list got it from ARM & HAMMER, since it mentions A&H baking soda. The recipe begins, "Sweeten the season with our gingerbread. This simple recipe is the perfect holiday dessert, especially when topped with yogurt or fresh fruit. Just grab a fresh box of ARM & HAMMER® Baking Soda- an important ingredient for great baking and prepare a treat for the whole family." The person who sent it to the emailing list ends this with, "I LIKE MINE TOPPED WITH A DOLLOP OF COOL WHIP!"

Ingredients:

1-1/2 cups sifted all-purpose flour

1 teaspoon ARM & HAMMER® Baking Soda

1 teaspoon ground ginger

1/4 teaspoon salt

1/3 cup vegetable shortening

1/2 cup sugar

1 egg

1/2 cup light molasses

3/4 cup boiling water

Directions

Sift together flour, Baking Soda, ginger and salt. Using an electric mixer, cream shortening in large bowl until fluffy. Add sugar gradually, beating after each addition. Beat in egg thoroughly; blend in molasses. Gradually stir dry ingredients into creamed mixture. Beat thoroughly. Stir in water. Turn into greased and floured 8-inch square baking pan. Bake in a 350-degree oven 40 minutes, or until toothpick inserted in center of cake comes out clean. Cool in pan 10 minutes; remove from pan and cool on rack. Makes one 8-inch square cake. Cut into 16 servings.

BANANA CREAM PIE NO-CHURN ICE CREAM

This is from Erin Jeanne McDowell in The New York Times cooking enewsletter. For this yumminess, Erin wrote, "This no-churn ice cream doesn’t require any cooking or special equipment. All you have to do is mash up some bananas and whip some heavy cream. The whipped cream mimics the air that’s incorporated into traditional ice cream when it’s churning in an ice cream machine. For the strongest flavor, use really, really ripe bananas; mushy, bruised ones with black peels will work well. Large crumbles of vanilla wafers stirred into the ice cream and sprinkled on top add crunch."

Total Time: 10 minutes, plus freezing; Yield: about 8 servings

Ingredients

1 pound very ripe bananas (about 3 medium bananas), peeled

1 (14-ounce) can sweetened condensed milk

2 teaspoons vanilla extract

Pinch of ground cinnamon

Pinch of fine sea salt

2-1/2 cups heavy cream

25 vanilla wafer cookies, broken into coarse pieces

Directions

In a large bowl, use a large fork or a potato masher to mash the bananas well. Add the condensed milk and mash again until the two are well combined. The mixture should be fairly smooth and only slightly lumpy.

Using a silicone spatula, stir in the vanilla, cinnamon and salt. Set aside.

In the bowl of an electric mixer fitted with the whip attachment or a handheld mixer, whip the heavy cream to medium peaks. Add about 1/4 of the whipped cream to the banana mixture and stir with the spatula to fully combine. (This lightens the mixture, making it easier to fold in the remaining whipped cream without losing too much aeration.)

Add the remaining whipped cream in 2 to 3 additions, folding gently just to combine. Add all but 3 tablespoons of the crumbled wafer cookies to the mixture and gently fold them in until incorporated.

Pour the mixture into a 9-by-9-inch pan and spread into an even layer. Sprinkle the reserved vanilla wafers evenly on top. Cover the ice cream with plastic wrap, gently pressing the wrap into the surface of the ice cream, and transfer to the freezer.

Freeze the mixture until firm, at least 6 hours. Before serving, let the ice cream soften at room temperature for 10 minutes before scooping.

CINNAMON BAKED DOUGHNUTS

This is from Ina Garten of the Food Network show, Barefoot Contessa.

Baking spray with flour, such as Baker's Joy

2 cups all-purpose flour

1-1/2 cups sugar

2 teaspoons baking powder

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon kosher salt

1 extra-large egg, lightly beaten

1-1/4 cups whole milk

2 tablespoons unsalted butter, melted

2 teaspoons pure vanilla extract

For the topping:

8 tablespoons (1 stick) unsalted butter

1/2 cup sugar

1/2 teaspoon ground cinnamon

Directions

Preheat the oven to 350 degrees. Spray 2 doughnut pans well.

Into a large bowl, sift together the flour, sugar, baking powder, cinnamon, nutmeg, and salt. In a small bowl, whisk together the egg, milk, melted butter, and vanilla. Stir the wet mixture into the dry ingredients until just combined.

Spoon the batter into the baking pans, filling each one a little more than three-quarters full. Bake for 17 minutes, until a toothpick comes out clean. Allow to cool for 5 minutes, then tap the doughnuts out onto a sheet pan.

For the topping, melt the 8 tablespoons of butter in an 8-inch saute pan. Combine the sugar and cinnamon in a small bowl. Dip each doughnut first in the butter and then in the cinnamon sugar, either on one side or both sides.
