BUTTERSCOTCH BANANA CREAM PIE

This recipe is from Vaughn Vreeland in The New York Times cooking enewsletter. For this recipe, Vaughn wrote, "This is grown-up banana pudding in pie form. One bite, and you may never want banana pudding any other way. Salted butterscotch pudding pairs with ripe, sweet bananas for a balanced (and slightly boozy, if using rum) filling. A crunchy pistachio and vanilla wafer crust nestles the thick custard, while a not-too-sweet crème fraîche topping lightens the whole thing. Be sure to slice and serve this pie directly from the refrigerator — if it doesn’t stay cold, it may be messy. (Watch me make my Thanksgiving pies on YouTube.)

Ingredients

For the Crust

1-1/2 cups vanilla wafer crumbs (from about 50 wafers)

1/4 cup granulated sugar

6 tablespoons melted butter

1 teaspoon kosher salt (such as Diamond Crystal) or 1/2 teaspoon fine salt

1/4 cup shelled unsalted pistachios, very finely chopped

For the Banana Pudding

4 large egg yolks

3 tablespoons cornstarch

3/4 packed cup dark brown sugar

1 cup heavy cream

1 cup whole milk

2 tablespoons unsalted butter, at room temperature

1 tablespoon dark rum or vanilla extract

1 teaspoon kosher salt (such as Diamond Crystal) or 1/2 teaspoon fine salt, or more to taste

3 to 4 ripe medium bananas, cut into 1/4-inch-thick slices

For the Whipped Cream

1/4 cup crème fraîche or sour cream

1 cup cold heavy cream

2 tablespoons powdered sugar

2 teaspoons rum or vanilla extract

1/4 cup shelled unsalted pistachios, finely chopped, for garnishing

Preparation

Make the crust: In a medium bowl, mix together the wafer crumbs, granulated sugar, butter, salt and pistachios. Pour the crust mixture into a 9-inch pie plate and use the bottom of a lowball glass or measuring cup to press evenly along the bottom and sides. Freeze for 10 minutes. Meanwhile, heat oven to 350 degrees.

Bake the crust for 15 minutes, until it begins to turn a slightly deeper golden brown. Cool completely.

Make the pudding: In a small bowl, whisk together the egg yolks and cornstarch until thickened. Set aside close to the stove. In a heavy saucepan, heat the brown sugar and 2 tablespoons of water over medium until the sugar dissolves, stirring occasionally. Bring to a boil and continue to cook for 4 to 6 minutes, until the bubbling slows. (It should reach about 240 degrees on an instant-read thermometer; be careful not to burn it). Turn off the heat, and add the cream and milk carefully as they will bubble vigorously at first. Whisk thoroughly. You may have some bits of undissolved sugar, but they will continue to melt.

Return to medium heat and cook the cream mixture until it begins to simmer, an additional 3 to 5 minutes. Carefully and slowly pour about 1/4 cup of the hot cream into the yolk mixture, whisking constantly. Pour the yolk mixture into the saucepan while whisking, then continue to cook, whisking continuously, until large bubbles form on the surface. Remove from the heat, then whisk in the butter, rum and salt. Taste the pudding and stir in more salt if you’d like.

Layer half of the banana slices over the bottom of the cooled crust. Pour the warm pudding over the bananas and smooth out the top. Place the remaining bananas on top, cover loosely with plastic wrap so a skin doesn’t form and let cool at room temperature for about 30 minutes. Chill the pie completely, for at least 4 hours or overnight.

Make the whipped cream: Use a hand mixer and a large bowl or a stand mixer fitted with a whisk attachment to beat the crème fraîche and heavy cream on high speed until medium-stiff peaks form, 2 to 3 minutes. Add the powdered sugar and rum and beat until just incorporated. Dollop the whipped cream on top of the chilled pie, top with chopped pistachios and slice and serve immediately. The pie will keep, refrigerated, for up to 4 days.

FROZEN STRAWBERRY LEMONADE PIE

This is from the Food Network, and begins, "This frozen strawberry lemonade pie just might be the ultimate summer dessert."

Ingredients

For the Crust:

12 graham cracker sheets

2 tablespoons sugar

5 tablespoons unsalted butter, melted

For the Filling:

1 cup chopped strawberries

1/2 cup raspberries

1/4 cup sugar

1 tablespoon water

4 ounces cream cheese, at room temperature

3/4 cup sweetened condensed milk

1 tablespoon finely grated lemon zest plus 1/3 cup fresh lemon juice (from 2 to 3 lemons)

1 cup cold heavy cream

For the Topping:

3 tablespoons strawberry jelly

1 cup strawberries, halved

Directions

Preheat the oven to 350 degrees F. Pulse the graham crackers and sugar in a food processor until finely ground. Add the melted butter and pulse until the mixture looks like wet sand. Press into the bottom and up the sides of a 9-inch fluted tart pan. Place on a baking sheet and bake until lightly browned and set, 12 to 14 minutes. Let cool completely on the baking sheet.

Meanwhile, make the filling: Bring the strawberries, raspberries, sugar and water to a boil in a small saucepan over medium-high heat. Reduce the heat and simmer until the liquid is syrupy and the fruit is very soft, 4 to 5 minutes. Strain through a fine-mesh sieve, pressing gently on the solids with a rubber spatula; discard the solids. Let the syrup cool.

If the cream cheese is a little stiff, soften it in the microwave in 10-second intervals. Beat the cream cheese in a large bowl with a mixer on medium-high speed until smooth and creamy, about 30 seconds. Add the condensed milk and beat until smooth. Add the berry syrup and the lemon zest and juice and beat until smooth.

In a separate large bowl, beat the heavy cream with clean beaters until medium peaks form. Gently fold the whipped cream into the cream cheese mixture using a rubber spatula until no streaks remain. Spoon the filling into the crust and spread with the back of a spoon. Cover with plastic wrap and freeze until firm, at least 4 hours.

About 10 minutes before serving, remove the pie from the freezer to soften slightly. Make the topping: Microwave the jelly in a medium microwave-safe bowl until runny, 20 to 30 seconds, then whisk until smooth. Add the strawberries and gently stir to coat. Let macerate 10 to 15 minutes. Remove the tart from the pan and transfer to a plate. Top with the strawberry mixture.

Cook’s Note

Remove the pie from the freezer and let it sit for about 10 minutes before slicing.

MILE-HIGH MUD PIE

This is from Ree Drummond at the Food Network. For this yumminess, Ree wrote, "I went big on this ice cream pie and layered some of my favorite flavors, like coffee, chocolate and caramel. What’s not to love?!"

Ingredients

2 quarts (1/2 gallon) coffee ice cream, softened

2 cups chopped pecans

2 quarts (1/2 gallon) chocolate ice cream, softened

2-1/2 cups chocolate-coated toffee pieces

50 chocolate sandwich cookies

1-1/2 sticks salted butter, melted

2 quarts (1/2 gallon) vanilla ice cream, softened

2-1/2 cups chocolate shell ice cream sauce (such as Magic Shell)

Directions

Line an 8-quart bowl with plastic wrap, leaving an overhang. Tip the coffee ice cream into the bowl and smooth the surface. Sprinkle the chopped pecans on top and freeze until the ice cream is firm, at least 1 hour.

Tip the chocolate ice cream into the bowl over the pecans and smooth the surface. Sprinkle the toffee pieces on top and freeze until firm, at least 1 hour.

Meanwhile, put the sandwich cookies in a food processor and pulse into fine crumbs. Pour in the melted butter and pulse to combine. Set aside.

Once the chocolate ice cream is firm, tip the vanilla ice cream into the bowl over the toffee pieces and smooth the surface. Tip the cookie mixture on top of the vanilla ice cream; spread it evenly and press down firmly. Cover with the overhanging plastic and freeze until completely firm, at least 4 hours and up to overnight.

Turn out the pie onto a cake stand or platter lined with 4 squares of parchment so that the paper hangs over the edges of the platter. Peel off the plastic wrap from the pie and pour the chocolate shell over the ice cream to cover completely. Slide out the sheets of parchment.

Cook’s Note

For an extra-sweet treat, drizzle each slice with warm caramel sauce.

SHEET-PAN SWEET POTATO, PECAN AND PUMPKIN PIE

This is from Jocelyn Delk Adams on the Today website. It begins, "This is a fun recipe that will please everyone, even the pickiest people, on holidays! You can have three different flavors of pie all in one, so everyone is satisfied.

2 boxes refrigerated rolled pie crust (4 crusts total)

1 egg plus 1 teaspoon water, whisked together

Pumpkin Pie Filling

1-1/2 cup pumpkin puree

1/4 cup evaporated milk

1/2 cup granulated sugar

1/2 teaspoon kosher salt

2 teaspoons pumpkin pie spice

1 large egg, room temperature

Pecan Pie Filling

2/3 cup light brown sugar

1/2 cup light corn syrup

4 tablespoon unsalted butter, melted and cooled

1 egg

1 egg yolk

1 teaspoon vanilla extract

1 pinch kosher salt

2 cups pecans, roasted and roughly chopped

Sweet Potato Filling

2/3 cup granulated sugar

5 tablespoons unsalted butter, room temperature

1 large egg

1/4 teaspoon vanilla extract

1 2/3 sweet potato, fully cooked and mashed

3/4 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

1/3 cup evaporated milk

Preparation

For the crusts:

Preheat the oven to 350 F.

Unroll 3 of the pie crusts on a lightly floured work surface. Stack them on top of each other. Roll out the thick, layered dough to a 15- by 21-inch rectangle. Press into a rimmed baking sheet so that the crust comes up the sides and hangs over slightly. This will be the bottom crust.

Chill until ready to use, at least 30 minutes.

For the pumpkin pie filling:

Whisk together the pumpkin, evaporated milk, sugar, salt, pumpkin pie spice and the egg in a medium bowl until smooth. Cover and set aside.

For the pecan pie filling:

Whisk together the brown sugar, corn syrup, butter, eggs, vanilla and salt in a medium bowl until smooth. Fold in the pecans, cover and set aside.

For the sweet potato pie filling:

Using a handheld mixer, beat together the sugar and butter until fluffy, then carefully mix in the egg and vanilla. Once combined, add mashed sweet potato, cinnamon, nutmeg and salt. As the mixture begins to smooth out, gradually pour in the evaporated milk. Mix until fully incorporated, cover and set aside.

To assemble:

Remove the prepared baking sheet with dough from the refrigerator. Using a fork, poke the pie crust about a dozen times, going all around the dough (except for the crust).

Using a large spatula, carefully scoop, spread and smooth each filling onto the crust. On the left side, start with the sweet potato and allow it to only take up 1/3 of the pan. Next, scoop out the pumpkin pie filling on the opposite right side leaving just the center open then add the pecan filling to the center (because there is a bit more liquid in the pecan mixture, it will spread a bit, do your best to control it by quickly scooping, spreading and smoothing).

Finally, decorate the outside pie dough that is hanging over and brush the outside of the pie crust with your egg wash.

Bake until all pies are set and the crust is golden-brown and crisp, about 50-60 minutes.

Remove the pie from the oven and allow it to completely cool, about 1 to 1-1/2 hours. Tightly cover the top with nonstick aluminum foil (or plastic wrap) and transfer to the refrigerator to set for at least 4 hours. Overnight is best.

Allow the pie to sit at room temperature for at least 30 minutes before serving. Slice, serve and enjoy!

CHAI-SPICED PEAR PIE

This is from Audra, otherwise known as The Baker Chick. If you’ve followed my blog for a while, you might remember me posting quite a few recipes from Audra (although it’s been a while). Her blog rocks! If you haven’t checked it out, you really should. Go ahead, I’ll wait.

This recipe begins, “I can’t possibly let you enter Thanksgiving week without another pie recipe. As the person in charge of desserts in my family, I’m always looking to make something classic with a twist and this gorgeous pie is just that apples get all the attention in the fall, but baking with firm, sweet pears is in my opinion just as good but way more unique and impressive.

“This pear pie is tossed with warm chai spices like cardamon, cinnamon, ginger and even a crack of black pepper. The result is just a bit more kick than what you’re probably used to with apple pie, but that same warm, melt-in-your-mouth goodness just waiting for a scoop of vanilla.”

Yield: 1 9-inch pie

Ingredients

2-3 single layers of Pie Crust (see note)

10 cups of peeled, thinly sliced pears (from about 8-10 pears depending on size, use something firm like bosc)

1/2 cup brown sugar

1/4 cup flour

1 teaspoon ground cinnamon

1/2 teaspoon ground cardamom

1/2 teaspoon ground ginger

1/4 teaspoon ground nutmeg

1/4 teaspoon ground cloves

3-4 twists of freshly ground black pepper (1/8 teaspoon, optional)

1/4 cup water

2 tablespoons butter

Instructions

Keep crust chilling in the fridge while you prep the pears.

In a large pot or dutch oven, toss together the pears, brown sugar, flour, and spices. Stir in water and dot with the butter.

Cook on medium heat, stirring frequently, tossing everything around to par-cook the pears a bit. Keep checking to see when a pear slice is "bendy" and slightly tender, but for me I cooked them for 10-15 minutes.

Allow pears to cool while you prep your dough. If you are doing a lattice or braided crust, roll some of the dough out now, form the braids, and freeze them until pie is ready to be assembled. If you are just doing a double crust- wait until the pears are mostly cool.

Roll out one layer of crust and drape over the bottom of a 9- inch pie pan leaving a bit of overhang. Pour the cooled pears into the crust and top with another sheet of pie crust, a lattice top, or the braids.

Trim and crimp edge of crust and pop the whole thing in the freezer for 10-30 minutes.

Preheat oven to 425.F. Place pie onto a cookie sheet and bake for 10 minutes, then reducing the heat to 350F and baking for another 45-50 minutes.. If the crust seems to be getting too dark you can drape some foil on top for the remainder of the baking.

Serve warm with vanilla ice cream.

Notes

*If you want a little extra pie dough to work with for a decorative crust, I like to have a bit extra and usually make 3 batches of crust. If you are just doing a classic top, two single layers is fine!

PEACH PIE

If I remember right, this is from my mom, who loved a good peach pie.

Ingredients

4 C peaches, cut up

1 – 1-1/4 C sugar

3 T unbleached flour

dash salt

2 T butter

1 unbaked pie shell and lattice top

Directions

Arrange peaches in unbaked pie shell. Mix sugar, flour & salt. Sprinkle over peaches. Dot with butter. Cover with lattice top. Bake at 425 degrees for 30-40 minutes.
