BEIGNETS

This yumminess is from Kay Chun on The New York Times cooking site. For this recipe, Kay wrote, "The French might have been the first to deep-fry choux pastry, but it’s in New Orleans that beignets became a true mainstay in bakeries and cafes. This version is relatively easy to make at home: The yeast-leavened dough comes together quickly, is very forgiving to work with and fries up light and airy. The yeast must be fresh and active: Once stirred with warm water and sugar, let the mixture stand for 10 minutes. If the yeast is fresh, it will create a foamy, bubbly layer on top. (If this doesn’t happen, you’ll need to start over with new yeast.) You can cook the beignets in a Dutch oven or deep skillet, no deep-fryer necessary. To obtain the perfect puffs, fry the fritters in batches so they have plenty of room to cook evenly on all sides. Beignets are best eaten hot, buried in a blanket of powdered sugar."

Total Time: 45 minute, plus 3 hours' rising; Yield: About 3 dozen

Ingredients

1-1/2 teaspoons active dry yeast

1/4 cup granulated sugar

3/4 cup warm water

1/2 cup whole milk

1 large egg

2 tablespoons unsalted butter, melted

1/2 teaspoon kosher salt

3-1/2 cups all-purpose flour, plus more for dusting

Vegetable oil, for greasing the bowl and deep-frying

Confectioners’ sugar, for dusting

Preparation

In the bowl of a stand mixer fitted with a dough hook attachment, combine yeast, 1 tablespoon granulated sugar and warm water; use a fork to mix well. Let stand until foamy, about 10 minutes. Add milk, egg, butter, salt and remaining 3 tablespoons granulated sugar and beat with fork to blend. With machine on low speed, gradually add flour. Increase speed to medium and beat just until a smooth dough forms, about 5 minutes.

Lightly grease a large bowl with vegetable oil. Transfer dough to the prepared bowl and turn to coat dough in oil. Cover bowl with plastic wrap and let stand at room temperature until doubled in size and very puffy, about 3 hours.

In a Dutch oven or cast-iron skillet, heat 2 inches of oil over medium to 350 degrees. On a lightly floured surface, turn out dough and cut in half. Working with one piece at a time and using a lightly floured rolling pin, roll dough into a 10-by-8-inch rectangle (about 1/4-inch thick). Cut into 2-inch squares and transfer to a parchment-lined baking sheet. Repeat with remaining dough, transferring to a second parchment-lined sheet.

In batches, fry dough until puffed and golden underneath, about 2 minutes. Flip the beignets and fry until golden on second side, 1 minute more. Transfer beignets to a paper towel-lined baking sheet and let stand for 1 minute. Generously dust with confectioners’ sugar and serve warm.

GREEK ORANGE CAKE (PORTOKALOPITA)

This is from Macrina Bakery in Portland, Oregon. If I ever take a road trip and end up in Portland, this'll have to be one of my stops.

This recipe begins, "This orange cake was by far the most inspirational recipe we made on our wonderful trip to Greece last fall. Known as Portokalopita, it is simple but does have nuances that need careful attention — like whipping the eggs and sugar mixture thoroughly, and folding the shredded filo in stages to ensure the custard coats each strand and creates its lovely finished texture! It’s best enjoyed warm from the oven, but if you have leftovers, it’s still delicious straight from the fridge."

Makes one 9-inch cake; Serves 6 to 8

Ingredients

Cake

3 eggs

3/4 cup granulated sugar

1 tsp baking powder

1/4 tsp salt

1 cup plain Greek yogurt, plus more for serving

2 Tbsp orange zest

1/2 cup fresh orange juice

1 tsp vanilla

3/4 cup sunflower oil

4 cups (5 oz) filo sheets, thawed and shredded*

Simple Syrup

2 cups water

1-1/4 cups granulated sugar

1 star anise

1 cinnamon stick

Directions

Cake

Preheat oven to 350°F. Line a 9-inch cake pan with a 16 x 12-inch piece of parchment paper, pressing it into the pan; set aside.

In a medium bowl, combine the eggs, sugar, baking powder, and salt. Whisk well, dissolving any lumps.

Add the yogurt, orange zest, orange juice, and vanilla; stir to combine.

Slowly drizzle in the sunflower oil while whisking.

Gently fold in the shredded filo in four additions.

Pour the batter into the prepared pan and place on the center rack. Bake for about 45 minutes, until the custard is set and the top is golden brown.

Simple Syrup

Combine all the syrup ingredients in a medium saucepan and bring to a simmer for 20 minutes. The mixture will reduce by about half and become syrupy.

Assembly

When the cake comes out of the oven, use a toothpick to poke many holes across the top. Pour half of the hot syrup over the cake and let it absorb for about 10 minutes. Then add more syrup until it pools on top.

Serve warm with a dollop of yogurt and a strong cup of coffee!

*Tip: When shredding the filo, start by pulling apart one sheet and then roughly rip it into 2-inch pieces. Repeat this for all sheets to ensure even distribution. Avoid clumping, as dense pockets can form in the cake. For accuracy, consider weighing the filo. If measuring by cups, lightly pack the measuring cup, but fluff the filo as you add it to the custard mixture.

LEMON-GINGERBREAD ICE CREAM SANDWICHES

This comes from Vegetarian Times (July/August 2005 issue, page 62), and begins, "These ice cream sandwiches will become a year-round favorite." Serves 12

Ingredients

1/3 cup molasses

1/2 tsp. baking soda

1/4 cup boiling water

2 cups all-purpose flour

2-1/2 tsp. ground ginger

2-1/2 tsp. ground cinnamon

1/4 tsp. each ground cloves, ground nutmeg, ground black pepper and salt

8 Tbs. (1 stick) soy margarine, softened

1/2 cup light brown sugar

2 pints lemon sorbet

4 cups vanilla soy "ice cream"

Preparation

Put molasses in heatproof bowl. Sprinkle baking soda over top. Add boiling water; whisk with fork.

Blend flour, ginger, cinnamon, cloves, nutmeg, pepper and salt in large bowl. Cream margarine and brown sugar in another bowl. Add molasses mixture; beat until soft dough forms. Divide in half, wrap each in plastic wrap and chill 1 hour.

Put 1 dough ball between 2 sheets wax paper. Roll into 8-1/2 x 12-1/2-inch shape; remove top wax paper. Using sharp knife, trim dough edges; cut dough into 12 2×4-inch rectangles. Prick with fork. Transfer on wax paper to cookie sheet; chill 30 minutes.

Repeat with remaining dough.

Preheat oven to 325F. Grease 2 cookie sheets. Transfer rectangles from wax paper to cookie sheets.

Bake 8 to 10 minutes, or until set but still soft to the touch. Transfer to wire rack, and cool completely.

Meanwhile, scoop sorbet and ice cream into large bowl; blend with wooden spoon. Freeze 20 minutes or longer, or until mixture is firm.

When completely cool, spread 1/2 cup frozen lemon filling onto bottom of one cookie. Pat filling down with spatula. Place second cookie on top (pricked side up), and gently press down. Scrape away any filling that spreads past edges, and use it to fill in corners. Smooth edges. Repeat with remaining cookies. Wrap sandwiches in plastic wrap, and freeze until firm, about 30 minutes.

DELAWARE CREAM CHEESE-PINEAPPLE PIE

This is from the infamous long-since-forgotten emailing list.

Ingredients

1/3 C Sugar

1 tbs Cornstarch

8 oz Crushed pineapple w juice

8 oz Cream cheese; softened

1/2 C Sugar

1 tsp Salt

2 Eggs

1/2 C Milk

1/2 tsp Vanilla

1 9" unbaked pie shell

1/4 C Pecans; chopped

Directions

Combine sugar, cornstarch and pineapple plus juice in a small saucepan. Cook over med. heat, stirring constantly until mixture is thin and clear. Cool; set aside.

Blend cream cheese, sugar and salt in a mixer bowl. Add 2 eggs, one at a time, beating after each addition. Blend in milk and vanilla. (If mixture looks slightly curdled, don't worry--it bakes out.)

Spread cooled pineapple layer over bottom of pie shell. Pour cream cheese mixture over pineapple; sprinkle with pecans.

Bake at 400 degrees for 50 minutes. Cool.

CHOCOLATE ESPRESSO OATMEAL COOKIES

Makes 48 cookies

from the recipe: "Take chocolate chip cookies to the next level with this espresso-spiked dough that's laced with chewy oats."

Ingredients

3/4 cup all-purpose flour or oat flour

1/4 cup unsweetened cocoa powder

1/4 tsp. salt

1/2 tsp. baking soda

4 oz. (1 stick) margarine, softened

3/4 cup sugar

1/4 cup cooled espresso or strong coffee

1/2 tsp. vanilla extract

1-1/2 cups oats

1/2 cup mini semisweet chocolate chips

Directions

Whisk together flour, cocoa powder, salt, and baking soda in bowl.

Cream margarine and sugar together with electric mixer in bowl. Beat in espresso and vanilla. Beat in flour mixture 1/2 cup at a time, adding up to 1/2 cup more if necessary to make thick dough. Stir in oats and chocolate chips.

Divide dough in half. Transfer each dough half to large sheet of plastic wrap or wax paper. Use plastic wrap to shape dough into 2 2-inch-diameter logs with plastic wrap or wax paper. Wrap tightly, and chill 2 hours, or overnight.

Preheat oven to 350ºF. Slice dough logs into 1/2-inch-thick slices. Transfer slices to greased or parchment paper–lined baking sheet. Bake 8 to 11 minutes, or until cookies look dry on top. Cool cookies 3 minutes on baking sheet before transferring to wire rack.

CLASSIC HOT FUDGE SUNDAE

This is from Melissa Clark in The New York Times cooking e-newsletter. Melissa wrote, “There is a reason a hot fudge sundae is such an enduring classic: That combination of warm, rich chocolate fudge mixing with frozen ice cream and melting it slightly is absolutely irresistible. Of course, if you have homemade fudge sauce and homemade ice cream, it gets even better. Vanilla ice cream is the standard here, but feel free to use your favorite flavor, or a combination of flavors. And if you like nuts, by all means use them here. The added crunch is marvelous against all the rich creaminess.”

For the Fudge Sauce:

3/4 cup heavy cream

1/2 cup packed light brown sugar

1/3 cup light corn syrup or honey

3 tablespoons Dutch-processed cocoa

1/4 teaspoon fine sea salt

2 tablespoons unsalted butter, cubed

7 ounces finely chopped bittersweet chocolate

1 teaspoon vanilla extract or 1 tablespoon brandy or rum

For Assembly:

1 cup chilled heavy cream

1 tablespoon superfine sugar, more to taste

1/2 teaspoon vanilla extract

2 pints your favorite flavor ice cream

Chopped toasted nuts, such as almonds, peanuts, or pecans (optional)

Cherries, for garnish (optional)

Preparation

In a medium saucepan over medium heat, bring the cream, sugar, corn syrup or honey, cocoa, and salt to a simmer, whisking until the sugar dissolves and the mixture thickens slightly, about 5 minutes.

Stir in the chocolate and let cook until the chocolate melts. Stir in butter and vanilla or liquor. Let cool slightly. Contrary to its name, hot fudge is best served warm, not piping hot.

For assembly, make the whipped cream. Using a whisk or an electric mixer, beat the cream, sugar, and vanilla until soft peaks form.

Pour a little fudge sauce into the bottoms of sundae dishes or bowls. Top with ice cream, then more hot fudge, then nuts if using. Cover all with whipped cream and a cherry if you like. Serve.
