HOLIDAY GINGERBREAD CAKE WITH MOLASSES WHIPPED CREAM

This yumminess is from Jessica B. Harris and adapted by Tejal Rao in The New York Times cooking enewsletter. For this recipe, Tejal wrote, "This recipe for hot-water gingerbread — using an old but reliable technique for a moist, tender cake that starts with a base of molasses and boiled water — comes from the cookbook author and culinary historian Dr. Jessica B. Harris, who included it in “A Kwanzaa Keepsake and Cookbook” (Scribner), updated in 2024 after its first 1995 edition. Here, the dessert is part of a six-course menu celebrating Nia, or purpose, the fifth principle of the holiday, though Dr. Harris bakes the simple cake throughout the season. The gingerbread, as well as the barely sweetened cream you should dollop generously on top, are both simple to make, and rich with the smoky, complex flavor of molasses."

Ingredients

For the Cake

4 tablespoons melted butter, plus more for greasing the baking pan

1 cup molasses

1/2 cup boiling water

2-1/4 cups all-purpose flour

1-1/2 teaspoons ground ginger

1 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/2 teaspoon salt

1/4 cup packed dark brown sugar

For the Molasses Whipped Cream

1 cup milliliters heavy whipping cream

3 tablespoons molasses

Preparation

Heat the oven to 350 degrees. Butter an 8-inch square baking pan.

In a heatproof medium bowl, combine the molasses and boiling water. Sift the flour, ginger, baking soda, cinnamon and salt into the molasses mixture. Add the melted butter and brown sugar and beat well either by hand or with an electric mixer. Pour the batter into the prepared pan.

Bake until a toothpick inserted in the middle comes out clean, about 35 minutes.

While the cake bakes, prepare the whipped cream: In a medium bowl, whisk the cream with a wire whisk, slowly drizzling the molasses into the cream. Whisk until the cream is whipped into firm peaks. (Alternatively, you can use an electric mixer.)

Let the cake cool directly in the pan, then cut into 8 rectangular pieces and serve with dollops of molasses whipped cream. Leftover cake will keep, refrigerated, for up to 2 days.

RHUBARB-STRAWBERRY REFRIGERATOR CAKE

My family spent several years in northeast Connecticut. When I was 15, my parents bought a new house in South Woodstock (we'd lived in Thompson).

One of the new house's charms was a good-sized garden; a large patch of rhubarb threatened to overrun the entire garden. While Dad claimed most of the garden (as “John’s Pea Patch”), Mom decided that the rhubarb was hers. This is one of the many rhubarb desserts we had that year.

Ingredients

6 C rhubarb, cut in 1/2” pieces

1 tsp. vanilla

3 dozen lady fingers, split

1/2 C sugar

whole fresh strawberries

2 pks. (3 oz. each) strawberry gelatin

2 C heavy cream, whipped

Directions

Combine rhubarb, sugar and 1 C water in saucepan. Bring to boil. Boil 6 – 8 minutes until soft. Drain 1 C syrup and save. Put rhubarb and remaining syrup in blender. Make pulp (3-1/2 C). Bring pulp to boil. Pour over gelatin and stir until dissolved. Chill until slightly thickened but not firm. Fold in whipped cream. Add vanilla. Line 9” springform pan (3” deep) with ladyfingers. Alternate layers of rhubarb mix and ladyfingers, ending with rhubarb. Chill overnight, or until firm. Top with glaze and strawberries.

Glaze: Mix reserve syrup and 1/4 C sugar. Bring to boil & stir in 1-1/2 T cornstarch. Blend with small amount of water. Boil and cook, stirring until thickened and clean. Add a few drops of red food coloring. Cool.

EASY PUMPKIN PUDDING CAKE

This is from Ashley, a high school teacher turned blogger, on her wonderful site, The Recipe Rebel. This recipe begins, “This Easy Pumpkin Pudding Cake takes just 10 minutes prep and makes it’s own caramel pudding sauce as it bakes! Perfect hot from the oven with a scoop of ice cream.”

Ingredients

1-1/2 cups flour (I use whole wheat!)

3/4 cup brown sugar, lightly packed

2 teaspoons baking powder

1 teaspoon cinnamon

1/4 teaspoon salt

pinch of nutmeg

pinch of cloves

3/4 cup pure pumpkin puree (not pie filling!)

1/3 cup milk (I use 1%)

1 tablespoon canola oil

1 teaspoon vanilla

Sauce

1 cup brown sugar, lightly packed

2 teaspoons corn starch

1-1/4 cup hot or boiling water

2 tablespoons butter

Instructions

Preheat oven to 350 degrees and lightly grease a 9" pie plate or baking dish.

In a large bowl, stir together the flour, 3/4 cup brown sugar, baking powder, cinnamon, salt, nutmeg and cloves with a spoon.

Add in pumpkin, milk, oil and vanilla and stir until a thick batter forms. Spread into prepared pie plate.

In a small bowl, stir together 1 cup brown sugar and corn starch until there are no clumps. Sprinkle over cake batter.

Add butter to hot water and stir until melted. Pour over brown sugar mixture in pan.

Bake for 35-40 minutes until top is completely set (keep in mind that there is a thick layer of caramel sauce in the bottom, so it may jiggle). Let sit for 5-10 minutes before serving.

Leftovers can be stored in the refrigerator and reheat perfectly!

CHOCOLATE FILLED CAKE ROLL

Servings: 12 one-inch slices

Ingredients

Cake:

5 eggs

1/2 cup sugar

3 packets of Sweet'n Low

1 teaspoon vanilla extract

3/4 cup all-purpose flour

2 tablespoons cornstarch

1 teaspoon baking powder

Filling:

2 cups skim milk

1 package sugar-free chocolate instant pudding mix

Topping:

2 teaspoons sugar-free cocoa mix

Directions

Preheat oven to 400F.

Grease and line the bottom of a 10x15" jelly roll pan with waxed paper.

Beat eggs in a large bowl with electric mixer until fluffy.

Sprinkle sugar, Sweet'n Low and vanilla over eggs; continue beating for 2 minutes.

Sift flour, cornstarch, and baking powder together.

Sprinkle half the mixture over batter; fold in with spatula.

Repeat with remaining flour mixture.

Spread batter evenly in pan.

Bake on center rack in oven for 10 to 12 minutes or until cake is golden and springs back when lightly touched.

Arrange a towel on work surface and cover with wax or parchment paper.

Loosen edges of cake; unmold on paper.

Roll cake jelly roll style, using towel as a guide.

Leave cake rolled until it cools into jelly roll shape.

To make filling, blend milk with pudding mix according to package directions. Refrigerate pudding until it thickens.

Unroll cake, spread evenly with pudding, and reroll.

Lightly sprinkle sugar-free cocoa over the top to decorate.

Cut into 1" slices and serve.

This recipe was given to my mom by a friend, who worked as a lawyer for years. She was married to an Episcopal priest; both were involved in the civil rights movement.

Ingredients

1 package (18 oz.) yellow cake mix

1 egg, unbeaten

3/4 C oil

1 package (small) vanilla pudding

3/4 C sherry

Directions

Preheat oven at 350 degrees. Put ingredients in bowl. Beat for 5 minutes. Pour into greased tube cake pan or mold. Bake for 45 minutes.

CHOCOLATE GUINNESS CAKE

This is from Nigella Lawson at The New York Times cooking enewsletter. For this recipe, Nigella wrote, "For me, a chocolate cake is the basic unit of celebration. The chocolate Guinness cake here is simple but deeply pleasurable, and has earned its place as a stand-alone treat."

For the Cake

Butter for pan

1 cup Guinness stout

10 tablespoons (1 stick plus 2 tablespoons) unsalted butter

3/4 cup unsweetened cocoa

2 cups superfine sugar

3/4 cup sour cream

2 large eggs

1 tablespoon vanilla extract

2 cups all-purpose flour

2-1/2 teaspoons baking soda

For the Topping

1-1/4 cups confectioners' sugar

8 ounces cream cheese at room temperature

1/2 cup heavy cream

Preparation

For the cake: heat oven to 350 degrees. Butter a 9-inch springform pan and line with parchment paper. In a large saucepan, combine Guinness and butter. Place over medium-low heat until butter melts, then remove from heat. Add cocoa and superfine sugar, and whisk to blend.

In a small bowl, combine sour cream, eggs and vanilla; mix well. Add to Guinness mixture. Add flour and baking soda, and whisk again until smooth. Pour into buttered pan, and bake until risen and firm, 45 minutes to one hour. Place pan on a wire rack and cool completely in pan.

For the topping: Using a food processor or by hand, mix confectioners' sugar to break up lumps. Add cream cheese and blend until smooth. Add heavy cream, and mix until smooth and spreadable.

Remove cake from pan and place on a platter or cake stand. Ice top of cake only, so that it resembles a frothy pint of Guinness.
