Brownies

Who doesn't love Brownies? They're cake-like (without the work), chocolatey, with enough to share without having tons of leftovers. Perfect!

To that end, here are six yummy brownie recipes to help you through the day, including Katharine Hepburn’s Brownies and Superfast Fudge Brownies. Enjoy!

EASY DOUBLE CHOCOLATE CHIP BROWNIES

This decadent yumminess is from Very Best Baking, and begins, "Easy Double Chocolate Chip Brownies are a chocolate lover's dream. For a delicious butter-free version, use LIBBY’S® 100% Pure Pumpkin in place of the butter."

Ingredients

2 cups (12-ounce package) NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels, divided

1/2 cup (1 stick) butter or LIBBY'S 100% Pure Pumpkin

3 large eggs

1-1/4 cups all-purpose flour

1 cup granulated sugar

1 teaspoon vanilla extract

1/4 teaspoon baking soda

1/2 cup chopped nuts

Directions

Preheat oven to 350° F. Grease 13 x 9-inch baking pan.

Melt 1 cup morsels and butter in large, heavy-duty saucepan over low heat; stir until smooth. (If using pumpkin instead of butter, melt the morsels by themselves. Then transfer chocolate to a large mixing bowl and let cool for 3 minutes, then stir in pumpkin.)

Stir in eggs. Stir in flour, sugar, vanilla extract and baking soda. Stir in remaining 1 cup morsels and nuts. Spread into prepared baking pan.

Bake for 18 to 22 minutes or until wooden pick inserted in center comes out slightly sticky. Cool completely in pan on wire rack. Cut into bars.

SUPERFAST FUDGE BROWNIES



This recipe comes from The Working Stiff Cookbook, by Bob Sloan and illustrated by Michael Klein. I absolutely love this cookbook. Even vegetarians can find plenty to love in it. The great thing about this recipe is that it really doesn't take much longer than a boxed mix, and is so much better!

The recipe starts with, "The perfect comfort food to go with your burgers. (Burger Bliss was on the preceding page.) Brownies always lift the spirits. Especially these brownies. They're fast, easy, and foolproof." I agree!



Ingredients

8 tablespoons (1 stick) butter (or margarine), cut into 4 pieces

1/2 cup Dutch-process unsweetened cocoa powder

1 cup sugar

1 teaspoon pure vanilla extract

2 extra-large eggs

3/4 cup all-purpose flour

Directions

Preheat the oven to 325 degrees F. Butter an 8-by-8-inch baking pan.

In a small saucepan over medium-low heat, melt the butter with the cocoa powder, stirring continuously until the butter is just melted. Use a rubber spatula to transfer the butter mixture to a large mixing bowl and let it cool for 2 minutes. Add the sugar and vanilla and stir with a wooden spoon until combined. Add the eggs one at a time, stirring until each is well combined. Add the flour and stir just until combined. Do not overmix.

Transfer the batter to the prepared pan and bake on the center rack of the oven for 20 minutes, or until a toothpick inserted in the center comes out clean or with tiny crumbs on it. Serve warm or at room temperature.

BROWNIE PIE

This is from Elizabeth Mervosh at Allrecipes. Elizabeth wrote, "This brownie pie is rich and fudgy with a perfectly crisp crust. Definitely serve with ice cream, whipped cream, and salted caramel."

Crust:

1-1/4 cups all-purpose flour, plus more for rolling

1 tablespoon granulated sugar

1/2 teaspoon kosher salt

1/2 cup cold unsalted butter, cut into 1/2-inch pieces

3 tablespoons ice water, or more as needed

Filling:

10 tablespoons unsalted butter, melted and cooled

3/4 cup granulated sugar

2 large eggs, at room temperature

1 large egg yolk, at room temperature

2 tablespoons canola oil

1 teaspoon vanilla extract

3/4 cup unsweetened cocoa powder

1/2 cup all-purpose flour

2 teaspoons instant espresso granules

1/2 teaspoon kosher salt

1/2 cup chopped walnuts or hazelnuts

1/2 cup semisweet chocolate chips, divided

Directions

For the crust, combine flour, sugar, and teaspoon salt in a food processor and pulse about 3 times until combined. Scatter cold butter over flour mixture in food processor. Pulse about 6 times until butter resembles pea-sized pieces. Drizzle 3 tablespoons water over butter mixture. Pulse about 6 times until couscous-like beads of dough form, adding 1 more tablespoon ice water if needed.

Transfer dough to a work surface, and press into a single mass. Shape and flatten dough into a disk. Wrap in plastic wrap, and chill for at least 1 hour or up to 2 days.

Unwrap dough and place on a lightly floured work surface. Let dough sit at room temperature for 10 minutes to soften. Dust top of dough with flour. Using a lightly floured rolling pin, roll disk into a 12-inch circle. Place in a 9-inch pie plate, pressing into bottom and up sides of pie plate. Fold edges under, and crimp as desired. Cover with plastic wrap, and freeze for 30 minutes.

Preheat the oven to 350 degrees F (175 degrees C). Place parchment paper over dough in pie plate; fill with pie weights or dried beans.

Bake in the preheated oven until crust is starting to set, about 15 minutes. Carefully remove pie plate from oven and take off parchment paper and pie weights. Return pie plate to oven, and bake until pie crust is light golden brown, 8 to 12 minutes. Transfer to a wire rack; let cool to room temperature, about 20 minutes.

Whisk together melted butter, sugar, eggs, egg yolk, canola oil, and vanilla extract in a bowl until blended and smooth. Whisk in cocoa, flour, instant espresso, and salt just until combined. Stir in nuts and 1/4 cup chocolate chips. Scrape mixture into cooled crust, and smooth top with a small offset spatula. Sprinkle remaining 1/4 cup chocolate chips on top of the pie.

Bake in the preheated oven until a toothpick inserted in the center comes out clean, 30 to 35 minutes, covering the crust with aluminum foil if it gets too dark. Let cool 20 minutes before serving.

KATHARINE HEPBURN'S BROWNIES

This was in New York Times Cooking e-newsletter. It begins, “Much like its author, this recipe is a no-fuss classic. It calls for just 1/4 cup of flour, which yields an incredibly rich and gooey brownie, and it's super easy to make. So easy, in fact, that baking a batch of these might just become part of your weekend routine.” Time: about 45 minutes; makes 12 brownies

1/2 cup cocoa

1/2 cup butter (1 stick)

2 eggs

1 cup sugar

1/4 cup flour

1 cup chopped or broken-up walnuts or pecans

1 teaspoon vanilla

Pinch of salt

Preparation

Heat oven to 325 degrees.

Melt butter in saucepan with cocoa and stir until smooth. Remove from heat and allow to cool for a few minutes, then transfer to a large bowl. Whisk in eggs, one at a time. Stir in vanilla.

In a separate bowl, combine sugar, flour, nuts and salt. Add to the cocoa-butter mixture. Stir until just combined.

Pour into a greased 8 x 8-inch-square pan. Bake 30 to 35 minutes. Do not overbake; the brownies should be gooey. Let cool, then cut into bars.

STRAWBERRY CHEESECAKE BROWNIES

Ingredients

Brownies:

Nonstick cooking spray, for the pan and parchment

1 stick (8 tablespoons) unsalted butter

2 ounces unsweetened chocolate, chopped

2 tablespoons unsweetened cocoa powder

3/4 cup granulated sugar

1/3 cup packed brown sugar

2 large eggs, at room temperature

3/4 cup all-purpose flour

Cheesecake Layer:

8 ounces cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

1 large egg

1/2 cup seedless strawberry jam

Directions

For the brownies: Preheat the oven to 350 degrees F. Grease an 8-inch square metal baking pan with nonstick cooking spray. Line the pan with parchment, leaving 2 inches overhanging on 2 sides. Grease the parchment with cooking spray.

In a medium saucepan over low heat, melt the butter with the chocolate, whisking until smooth and fully melted. Whisk in the cocoa powder until combined. Remove from the heat and stir in the granulated and brown sugar until combined. Whisking constantly, add the eggs and mix until fully incorporated. Add the flour and whisk until completely smooth; the mixture will be very thick. Set aside.

For the cheesecake layer: Beat the cream cheese in a bowl with an electric mixer or in the bowl of stand mixer until smooth. Add the granulated sugar and vanilla and continue to mix until fully incorporated and fluffy. Add the egg and mix until fully combined.

Spoon the brownie mixture into the bottom of the prepared baking pan, using a spatula to spread it into an even layer. Carefully pour the cheesecake mixture over the brownie layer; distribute evenly and smooth.

Stir the strawberry jam with a spoon to loosen it. Drop spoonfuls of the jam over the cheesecake mixture. Using a toothpick or skewer, swirl the jam into the cheesecake, being careful not to press too deep and disturb the brownie layer.

Fill a separate baking dish with hot water and place on the bottom rack of the oven. This will add moisture to the oven during baking so the cheesecake layer does not crack. Place the cheesecake brownie pan on the center rack above and bake for 40 minutes. Turn the oven off and leave in the oven for an additional 10 minutes.

Remove the brownies from the oven and allow to cool completely in the pan. Refrigerate the pan until the brownies are chilled, 2 to 4 hours. Using the parchment edges, transfer the brownies to a board, then remove the parchment from under. Trim off the edges and cut into 8 bars.

MARASCHINO CHERRY CREAM CHEESE BROWNIES

This is from Betty Crocker, and begins, “Cream cheese, maraschino cherries and Betty Crocker™ Supreme original brownie mix create a trio of delight in this fudgy irresistible treat!”

Ingredients

Filling

3 oz (from 8-oz package) cream cheese, softened

1/4 cup sugar

1 tablespoon Gold Medal™ all-purpose flour

3 tablespoons chopped maraschino cherries, drained, patted dry

1 teaspoon maraschino cherry juice

1 egg, separated, yolk reserved for brownie batter

Brownies

1 box (16 oz) Betty Crocker™ Supreme original brownie mix

Water, vegetable oil and egg called for on brownie mix box

Reserved egg yolk

Directions

Heat oven to 350°F (325°F for dark or nonstick pan). Grease bottom of 9-inch square pan with shortening or cooking spray. In small bowl, mix cream cheese and sugar with spoon until smooth. Add flour, cherries, cherry juice and egg white; mix until well blended. Set aside.

Make brownie batter as directed on box adding reserved egg yolk. Reserve 3/4 cup brownie batter; set aside. Spread remaining batter in pan. Spoon filling by tablespoonful dollops evenly onto batter, making 3 rows by 3 rows. Spoon about 1 tablespoon of the reserved brownie batter in center of each filling dollop. Draw knife through mixture in four straight lines horizontally, the vertically for swirled design.

Bake 28 to 32 minutes or until toothpick inserted 2 inches from side of pan comes out almost clean. Cool 30 minutes on cooling rack. Refrigerate at least 1 hour or until chilled. Cut into 4 rows by 4 rows. Store covered in refrigerator.

Expert Tips

Take the cream cheese out of the refrigerator about 30 minutes before stirring up the batter, allowing it to soften and warm up. Or, to quickly soften cream cheese, remove from wrapper and place on microwavable plate. Microwave uncovered on High about 10 seconds or just until softened.

To make a pinker filling, add a few drops of red gel food color when making the cream cheese filling.

Adding the extra egg yolk to the brownie batter gives structure and helps the cream cheese filling swirl throughout the brownies.

Be sure to insert toothpick in the brownie and not the cream cheese filling when testing for doneness.

To make cutting the brownies a breeze, line the baking pan with foil, allowing some to hang over edges of pan. Once the brownies are chilled, you can lift them out of the pan onto a large cutting board, peel foil away and cut into serving pieces.
