Is there anyone who doesn't love Fudge?

Okay, that might be considered a trick question, since many of us can point to one or two people who aren't wild about it. For the rest of us, though, fudge is definitely a yummy treat.

EASIEST PEANUT BUTTER FUDGE

This is from Angie Hammond at AllRecipes, and begins, "Peanut butter fudge is a delicious treat and great for sharing at parties or work! This is the easiest and best recipe for creamy peanut butter fudge I have ever used."

Ingredients

1/2 cup butter

1 (16 ounce) package brown sugar

1/2 cup milk

3/4 cup peanut butter

1 teaspoon vanilla extract

3-1/2 cups confectioners' sugar

Directions

Melt butter in a medium saucepan over medium heat; stir in brown sugar and milk. Bring to a boil and boil for 2 minutes, stirring frequently.

Remove the pot from heat; stir in peanut butter and vanilla.

Place confectioners' sugar in a large mixing bowl. Pour in peanut butter mixture and beat with an electric mixer until smooth.

Pour peanut butter mixture into an 8x8-inch dish.

Chill until firm before slicing, about 1 hour.

SUPERFAST FUDGE BROWNIES



This recipe comes from The Working Stiff Cookbook, by Bob Sloan and illustrated by Michael Klein. I absolutely love this cookbook. Even vegetarians can find plenty to love in it. The great thing about this recipe is that it really doesn't take much longer than a boxed mix, and is so much better!

The recipe starts with, "The perfect comfort food to go with your burgers. (Burger Bliss was on the preceding page.) Brownies always lift the spirits. Especially these brownies. They're fast, easy, and foolproof." I agree!



Ingredients

8 tablespoons (1 stick) butter (or margarine), cut into 4 pieces

1/2 cup Dutch-process unsweetened cocoa powder

1 cup sugar

1 teaspoon pure vanilla extract

2 extra-large eggs

3/4 cup all-purpose flour

Directions

Preheat the oven to 325 degrees F. Butter an 8-by-8-inch baking pan.

In a small saucepan over medium-low heat, melt the butter with the cocoa powder, stirring continuously until the butter is just melted. Use a rubber spatula to transfer the butter mixture to a large mixing bowl and let it cool for 2 minutes. Add the sugar and vanilla and stir with a wooden spoon until combined. Add the eggs one at a time, stirring until each is well combined. Add the flour and stir just until combined. Do not overmix.

Transfer the batter to the prepared pan and bake on the center rack of the oven for 20 minutes, or until a toothpick inserted in the center comes out clean or with tiny crumbs on it. Serve warm or at room temperature.

OLD-FASHIONED CHOCOLATE FUDGE

This is from AllRecipes, and begins, "This 5-ingredient chocolate fudge recipe makes over 60 mini fudge squares! These rich, creamy, and delicious fudge treats are perfect for special occasions or holiday dessert tables. Customize these chocolaty fudge squares by adding 1 cup of add-ins (like chopped nuts, chocolate chips, or mini candies) when you add the butter. Be sure to use a candy thermometer for best results."

Ingredients

2 cups white sugar

1/2 cup unsweetened cocoa powder

1 cup whole milk

4 tablespoons unsalted butter, sliced and softened

1 teaspoon vanilla extract

Directions

Gather ingredients.

Grease an 8-inch square baking pan.

Place sugar and cocoa powder in a medium saucepan; pour in milk and stir until blended. Set heat to medium-high and stir constantly until mixture comes to a boil.

Reduce heat to low and place a candy thermometer in the pan. Let the mixture simmer without stirring until the temperature reaches 238 degrees F (114 degrees C) when measured with a candy thermometer, about 10 minutes.

If you don't have a candy thermometer, drop a small amount of the mixture into cold water; if it forms a soft ball that flattens when removed from the water and placed on a flat surface, it's ready.

Remove from the heat. Allow to cool to 110 degrees F (43 degrees C), 50 to 70 minutes. Do not disturb fudge as it's cooling.

Add butter and vanilla to the fudge. Beat with a wooden spoon until well incorporated and fudge loses its sheen; do not under beat.

Pour fudge into prepared pan and press to flatten. Let cool at room temperature or in the refrigerator before cutting into 1-inch squares.

FABULOUS VEGAN FUDGE CAKE WITH BITTERSWEET ICING

This recipe, from the September 2012 issue of Vegetarian Times, page 66, begins, “'I’ve tried vegan cake recipes in the past, but didn’t like the sour taste of the vinegar that is usually used to activate the leavening,' says single mom and café manager Shelly Platten. 'I tinkered with some recipes that didn’t use vinegar to come up with a fudgy, satisfying cake.'” Serves 8.

Ingredients

1-1/4 cups Bob’s Red Mill organic unbleached white flour

1-2/3 cups Florida Crystals organic cane sugar, divided

1-1/3 cups Chatfield’s cocoa powder, divided

1 tsp. baking soda

1/2 tsp. salt

1 cup Silk vanilla soymilk, divided

1/3 cup plus 1/4 cup canola oil, divided

1 cup toasted chopped hazelnuts

Directions

Preheat oven to 350°F. Line 9-inch round pan with parchment paper, and spray with cooking spray.

Whisk together flour, 1 cup sugar, 2/3 cup cocoa, baking soda, and salt in bowl. Whisk together 2/3 cup soymilk, 1/3 cup oil, and 1/2 cup water in separate bowl. Stir soymilk mixture into flour mixture. Spread in prepared pan, and bake 25 minutes, or until toothpick inserted in center comes out clean. Cool 10 minutes. Unmold onto plate.

Warm remaining 2/3 cup cocoa, 2/3 cup sugar, and 1/4 cup oil in saucepan over medium heat. Pour in remaining 1/3 cup soymilk, and cook 1 minute, or until smooth. Spread icing over warm cake, and sprinkle with hazelnuts.

I found this on allrecipes. It begins, "This fantasy fudge recipe is straight from the label of a well-known brand of marshmallow cream. After some time, the company changed the recipe, but this is the original for smooth chocolate and marshmallow cream fudge with walnuts. This recipe makes a large batch (3 pounds!) so consider gifting some of these sweet fudgy morsels to friends and family during the holidays."

Mix sugar, margarine, and evaporated milk in a large, heavy saucepan over medium heat, stirring to dissolve sugar. Bring mixture to a full boil and cook for 5 minutes, stirring constantly.

Remove from the heat and add chocolate chips; stir until chocolate chips are melted and mixture is thoroughly combined. Stir in marshmallow cream until incorporated. Mix in walnuts and vanilla.

Transfer fudge to the prepared pan and use an offset spatula to spread out and flatten. Let cool for at least 1 hour before cutting into squares.

GRANDMA'S CREAMY PEANUT BUTTER FUDGE

This is from AllRecipes, and begins, "This old-fashioned style of peanut butter fudge is not that easy to find out there. The ones I tend to run across always seem to be the soft, creamy version, which is not what I'm into. If it's going to feel like peanut butter in my mouth, then what's the point? No, I want something that feels dense and firm in my fingers but will almost instantly liquefy in when it hits my tongue."

Ingredients

1 pound powdered sugar

1-1/4 cups unsalted butter

1-1/2 cups creamy peanut butter

1/2 teaspoon kosher salt

1-1/2 teaspoons vanilla extract

Directions

Sift sugar through a fine-mesh strainer into a large bowl.

Heat butter and peanut butter in a saucepan over medium heat. Whisk to combine and cook until bubbles appear on the edges, 3 to 5 minutes. Stir in salt and vanilla extract. Pour over powdered sugar in the bowl. Mix together using a spatula until smooth.

Spread mixture into an 8x8-inch baking pan lined with plastic wrap. Wrap fully and refrigerate until firm enough to cut but not too hard, 1 to 3 hours.

Unwrap fudge and cut into small cubes. Let warm up on the counter before cutting if needed.

Chef's Notes:

This technique will work with other nut butters, smooth or chunky, like almond or cashew.

Use 1/4 teaspoon fine salt instead of kosher if desired.
