Is there any dessert as yummy as ice cream during the summer? Maybe not. To that end, here are six yummy ice cream recipes to help you through the day, including several ice cream taco bowl desserts (yes, you read that right!), Homemade Strawberry Ice Cream, and more. Enjoy!

CHOCOLATE TACO MINI TACO BOWLS

This is from Old El Paso, and begins, "A chocolate taco? Delicious! Crispy, sugar-coated mini bowls are dipped into chocolate and chopped peanuts and filled with ice cream for an absolutely addictive version of an ice cream truck favorite. Here's how to make the chocolate dessert tacos of your dreams!"

Ingredients

1 tablespoon butter, melted

10 tortilla bowls from 1 package (5.1 oz) Old El Paso™ Flour Soft Tortilla Mini Bowls (12 Count)

3/4 cup semisweet chocolate chips

1 tablespoon shortening

1/2 cup plus 3 tablespoons finely chopped cocktail peanuts

1-1/2 cups vanilla ice cream

1/4 cup chocolate sauce

1/4 cup caramel topping

Preparation

Heat oven to 375°F. Line cookie sheet with foil. Lightly brush melted butter on all sides of each bowl. Place bowls on cookie sheet. Bake 5 to 8 minutes or until browned on edges and firm to the touch. Cool 15 minutes.

In medium microwavable bowl, microwave chocolate chips and shortening uncovered on High 60 to 90 seconds or until mixture can be stirred smooth.

Place 1/2 cup of the chopped peanuts on plate. Hold baked bowls by the bottom, and dip each one into melted chocolate, covering top rim of bowl. Dip and roll top rim into chopped peanuts to coat. Refrigerate bowls about 10 minutes or until coating is set.

Fill each bowl with 2 small scoops (about 1 tablespoon) ice cream; drizzle with chocolate sauce and caramel topping, and garnish with remaining 3 tablespoons peanuts.

Expert Tips

Chopped toasted almonds are a nice alternative to the chopped peanuts in this chocolate taco recipe.

Any flavor of ice cream and sauces will work well for these chocolate-dipped ice cream tacos, so feel free to fill them with your favorite combination.

ICE CREAM OREO TACO BOWLS

Place bowls on large cookie sheet. Bake 5 to 8 minutes or until browned on edges and firm to the touch. Cool 15 minutes.

Place 1/2 cup of the crushed cookies on plate. Hold baked bowls by the bottom, and dip each one into melted chocolate, covering top rim of bowl. Dip and roll top rim into crushed cookies to coat. Refrigerate bowls about 10 minutes or until coating is set.

Fill each bowl with 2 scoops ice cream; drizzle with hot fudge sauce, and garnish with remaining crushed cookies sprinkled over ice cream and 1 whole cookie inserted upright into ice cream.

Expert Tips

We used cookies & cream ice cream in this recipe, but if you prefer chocolate or vanilla ice cream, feel free to make a substitution.

If you like a little caramel with your chocolate, you can add a drizzle of warm caramel sauce along with the hot fudge.

Crush cookies quickly and easily by placing them in a food-storage bag and pounding gently with a meat mallet or rolling pin.

STRAWBERRY SHORTCAKE ICE CREAM CAKE

Ingredients

2 sticks unsalted butter, at room temperature, plus more for the pans

2-1/4 cups cake flour, plus more for the pans

2 teaspoons baking powder

1/2 teaspoon salt

1 cup packed light brown sugar

1/2 cup plus 2 tablespoons granulated sugar

4 large eggs

1 tablespoon plus 2 teaspoons pure vanilla extract

3/4 cup whole milk

1 pint strawberry ice cream

1 pint vanilla chocolate chip ice cream

4 cups strawberries (about 2 pints), hulled and quartered

1 tablespoon fresh lemon juice

2 cups cold heavy cream

1/2 cup confectioners' sugar

Directions

Preheat the oven to 325 degrees F. Butter two 9-inch round cake pans, line the bottoms with parchment and butter the parchment. Lightly dust the pans with flour and tap out any excess.

Whisk the cake flour, baking powder and salt in a medium bowl. Beat the butter in a large bowl with a mixer on medium-high speed until creamy, about 1 minute. Add the brown sugar and 1/2 cup granulated sugar and beat until light and fluffy, about 5 minutes. Scrape down the sides and beat in the eggs one at a time. Beat in 1 tablespoon vanilla. Reduce the speed to low and beat in the flour mixture in 3 batches, alternating with the milk. Increase the speed to medium high and beat until the batter is just combined, about 20 seconds (do not overbeat).

Divide the batter between the prepared pans. Bake until the cake is just golden and springs back when gently pressed, 30 to 35 minutes. Transfer to a rack and let cool 20 minutes in the pans, then turn out onto the rack, remove the parchment and let cool completely.

Meanwhile, remove the ice cream from the freezer and let soften slightly. Combine both flavors in a large bowl and stir together with a rubber spatula. Line one of the cooled cake pans with plastic wrap and fill with the ice cream in an even layer. Cover with plastic wrap and freeze until firm but not rock solid, about 45 minutes.

Uncover the ice cream and invert onto one of the cake layers; discard the plastic wrap. Top with the second cake layer, gently pressing it into the ice cream. Smooth the sides with an offset spatula. Freeze until firm, at least 1 hour.

Meanwhile, pulse 2 cups strawberries in a food processor until liquefied. Strain through a fine-mesh sieve, pressing with a rubber spatula; set the puree aside. Combine the remaining 2 cups strawberries, remaining 2 tablespoons granulated sugar and the lemon juice in a small bowl; toss.

Combine the heavy cream, confectioners' sugar and remaining 2 teaspoons vanilla in a large bowl. Beat with a mixer on medium-high speed until stiff peaks form, about 3 minutes. Beat in the strawberry puree.

Remove the cake from the freezer and frost with the strawberry whipped cream. Return to the freezer until the whipped cream hardens, at least 45 minutes or overnight. Top with the macerated strawberries. Let the cake soften 10 to 15 minutes before slicing.

HAWAII-STYLE SHERBET

This is from Neale Asato and adapted by Ligaya Mishan at The New York Times cooking enewsletter. For this recipe, Ligaya wrote, "Sherbet is lusher than sorbet, more ethereal than ice cream. This recipe — a creamy, frozen concoction of soda and condensed milk, no ice-cream maker required — comes from Neale Asato, who runs the Asato Family Shop, a cult favorite in Honolulu. For people in Hawaii, Mr. Asato’s sherbet is a nostalgic callback to guri-guri (goodie-goodie), the nearly century-old specialty at Tasaka Guri Guri on Maui. Mr. Asato’s version for home cooks is easy and fun to make: Bring strawberry soda to a boil (you can do it in the microwave), add a packet of gelatin as a stabilizer, stir in condensed milk and spike with vanilla extract. Freeze to a slush, then whip on high speed, letting in the air until it expands, a pink cloud rising. Mix in more strawberry soda (and evaporated milk, if you have it on hand, to temper some of the sweetness), then freeze again. Break out an ice-cream scoop. Shiver."

Time: 20 minutes, plus at least 14 hours’ freezing; Yield: About 9 cups/18 servings

Ingredients

3 (12-ounce) cans strawberry soda (or the soda flavor of your choice), 1 at room temperature and 2 chilled

1 (3-ounce) box strawberry Jell-O (or the Jell-O flavor of your choice, matching your selected soda flavor)

1 (14-ounce) can sweetened condensed milk

2 teaspoons vanilla extract

1/2 (12-ounce) can evaporated milk (optional; see Tip)

Preparation

Bring the contents of the can of room-temperature strawberry soda to a boil, either in a microwave in a medium, microwave-safe bowl for 2 to 3 minutes, or in a medium saucepan on the stovetop.

Remove from heat and whisk in dry Jell-O mix until thoroughly dissolved, then whisk in condensed milk and vanilla extract until well combined.

Refrigerate, uncovered, overnight, or freeze for 2 to 3 hours, until thickened. When it’s ready, it will have a texture akin to a loose jelly.

Whisk the mixture using an electric hand or stand mixer on high speed for 3 to 7 minutes, until it starts to lighten in color and almost doubles in volume. (If you do not have an electric mixer, whisk by hand for about 10 minutes.) Whipping the gelatin helps to stabilize the mixture and introduces tiny air bubbles, which make it less icy once frozen, and easier to scoop.

Turn the speed to low and stir in the remaining 2 chilled cans of strawberry soda, followed by the evaporated milk (if using).

Transfer the mixture to a container with a lid or cover with plastic wrap. Freeze overnight or for at least 12 hours before scooping and serving.

Tip

Evaporated milk is optional, but adds a nice milky flavor and tempers some of the sweetness.

FRESH MANGO ICE CREAM

Several years ago, I signed up for newsletters from Authentic Florida. If you haven't signed up for their newsletters, I highly recommend it (especially if you live in and/or love Florida).

This recipe was posted in the Authentic Florida newsletter on July 21, 2020, and reposted on July 15, 2021. It's definitely yummy, and is an Authentic Florida recipe. It begins, "Florida mangos are in season and Authentic Florida’s fresh mango ice cream recipe is the perfect dessert to help you cool down. Try this fresh, delicious, tropical, and refreshing dessert that does not require an ice cream machine!"

Ingredients

2-1/2 cups of cubed mangos (about 3 ripe medium-sized mangos)

1/3 + 3/4 cup of granulated sugar, plus extra if needed

2-1/2 Tablespoons of lime juice (1-2 limes)

1-3/4 cups of Half & Half cream

1-1/4 cups of coconut milk (1 can found in the Asian section of a grocery store)

6-8 fresh mint leaves for garnish (optional)

1 ice cream maker (optional)

Instructions

Peel the mangos and cut them into small cubes. (You’ll be cutting around a large seed.) In a medium bowl combine the cubed mango with 1/3 cup of sugar, cover, and marinate in the refrigerator for one hour (or longer if you have the time).

Next, pour the contents from the refrigerated mangoes (including the juice) in a saucepan over medium-low heat for five minutes, stirring occasionally. Remove and cool. Note: if you have leftover mango (more than 2-1/2 cups), keep the mixture refrigerated to place over the finished ice cream.

In a blender or food processor, puree the mango mixture.

Next, add the lime juice and process it again. Cover and chill for an hour.

Gently stir in the pureed mango. Taste test the mixture to decide whether it’s sweet enough and if not add 1-2 tablespoons of sugar. From this point, pour into a plastic container, cover with a tight lid, and chill in the freezer, stirring occasionally until hardened. If you have an ice cream maker, following the recommended directions. In a large bowl, combine the Half & Half and the coconut milk with the remaining 3/4 cup sugar, stirring to dissolve the sugar.

Remove from the freezer 15 minutes before serving. Top with some mint and fresh-cut mangos. Enjoy!

HOMEMADE STRAWBERRY ICE CREAM

This also comes from Authentic Florida (originally posted on Feb. 20, 2018, and sent out again on January 14, 2021). Ingredients for Florida Fresh Strawberry Ice Cream Recipe

3 Cups fresh Florida strawberries, stemmed and sliced

4 Tablespoons freshly squeezed lemon juice

1-1/2 Cups of sugar divided (1/2 cup & 1 full cup)

1-1/2 Cups of whole milk

2-3/4 Cups heavy cream

1-1/2 Teaspoons pure vanilla extract

Directions

Step One

In a small bowl, combine the strawberries with the lemon juice and 1/2 cup of the sugar.

Stir gently and allow the strawberries to macerate in the juices for 2 hours.

Using a strainer, strain the berries, reserving the juices.

Then, mash or puree half the berries.

Step Two

In medium mixing bowl, use a hand mixer on low speed to combine the milk and remaining granulated sugar until the sugar is dissolved, about 1-2 minutes. If you don’t have a mixer, use a hand whisk for 3-4 minutes.

Stir in the heavy cream, reserved strawberry juice, mashed strawberries and vanilla.

Step Three

Turn the machine on; pour the mixture into the freezer bowl, and let mix until thickened about 20-25 minutes.

Five minutes before the mixing is completed, add the reserved sliced strawberries and let mix in completely.

If you don’t have an ice cream maker, don’t despair, you don’t need one, just:

Pour in the reserved strawberries, mix and place into a plastic container covered with a tight lid and chill in the freezer overnight, stirring occasionally until hardened.

Note: The ice cream will have a soft, creamy texture. If a firmer consistency is desired, transfer the ice cream to an airtight container and place in freezer about 2 hours. Remove from freezer about 15 minutes before serving.
