Lemon Desserts

Most of us have certain foods and/or flavors that we absolute love. (Yes, there is the flip side of you'll never get me to willingly eat that.)

Anyway, one of things my mother loved was anything lemony. She even added a can of frozen lemonade to her pitchers of homemade ice tea, something I still do.

When we moved to Florida, we lived close enough to a Dunkin' Donuts that Mom would pick up a dozen donuts at least once a week; at least one of these would be a lemon-filled donut that she absolutely loved. They were definitely her favorite.

I have a sneaking suspicion Mom would love these Lemon Desserts. Check out the Classic Lemon Meringue Pie, the Lemon Sheet Cake with Raspberry Whipped Cream, or any of the other yummy lemony desserts in today's post. Enjoy!

LEMON TRIFLE

From an old emailing list. This one begins, “This is a wonderful treat anytime of year, but especially in the warm weather!”

Prep Time: 5 minutes; Cooking Time none; Serves 14

Ingredients

1 can sweetened condensed milk (14 ounces)

1 carton lemon yogurt, (8 ounces)

1/3 cup Lemon juice

2 teaspoons Grated lemon peel

2 cups whipped topping

1 angel food cake, (10 inches), cut into 1-inch cubes

2 cups fresh raspberries

1/2 cup flaked coconut, toasted

fresh mint, optional

Directions

In a bowl, combine the first four ingredients. Fold in whipped topping.

Place half of the cake cubes in a trifle bowl or 2-qt. serving bowl. Top with half of the lemon mixture. Repeat layers. Top with raspberries. Garnish with coconut and mint if desired.

LEMON TOFU CHEESECAKE

This recipe comes from Vegetarian Times, and begins, "This vegan dessert brings zippy citrus and creamy texture to the party."

"This lemon tofu cheesecake, originally published by Vegetarian Times in 1997, makes for an elegant vegan dessert. While you can dig in as soon as it sets, after about two hours of chill time, we find it actually tastes better the next day, after the flavors have had time to continue to develop.

"If it’s just too hot to turn on the oven, this recipe can easily be adapted to a no-bake format. Just skip the cornstarch called for in the filling. The result will be something a bit more loose and creamy."

Ingredients

Crust

2 cups graham crackers

1/4 cup maple syrup

1/2 teaspoon almond extract

Filling

1 pound firm tofu

1/2 cup sugar

1/4 teaspoon almond extract

1 tablespoon tahini or almond butter

1/2 teaspoon salt

2 tablespoons lemon juice

1/2 teaspoon lemon zest

2 tablespoons cornstarch dissolved in water

1 tablespoons vegan milk such as soy, rice, or almond

Preparation

Crust: Preheat oven to 350 degrees. In medium bowl, mix cracker crumbs, syrup, and extract until crumbs are moistened. Pour into oiled 9-inch pie plate; press mixture firmly to form crust. Bake 5 minutes; let cool while preparing the filling.

Filling: In food processor or blender, combine ingredients and process until smooth, about 30 seconds.

Bake: Pour mixture into crust. Bake until top is slightly browned, about 30 minutes. Cool and refrigerate until thoroughly chilled and firm, about 2 hours.

CLASSIC LEMON MERINGUE PIE

This comes from Diana Rattray on The Spruce Eats. She wrote, “Here's a delicious lemon meringue pie, made with fresh lemon juice, eggs, and other ingredients. Use a homemade or purchased pie shell for this pie.”

Ingredients:

1 baked pie pastry, 9-inch

1-1/2 cups granulated sugar

3 tablespoons cornstarch

3 tablespoons all-purpose flour

dash salt

1-1/2 cups hot water

3 egg yolks, slightly beaten

2 tablespoons butter

1 scant teaspoon grated lemon peel

1/3 cup fresh lemon juice

3 egg whites

1 teaspoon lemon juice, optional

6 tablespoons granulated sugar

Preparation:

In a medium saucepan, combine 1-1/2 cups sugar, the cornstarch, flour, and salt; whisk to blend well. Gradually stir in hot water. Place over medium heat and bring to a boil, stirring constantly. Reduce heat to low; continue cooking, stirring, for 8 minutes. Stir about 1/3 cup of the hot mixture into the slightly beaten egg yolks, then return to hot mixture in saucepan. Bring to a boil, stirring constantly, and cook for 4 minutes longer. Add butter and lemon peel. Slowly stir in 1/3 cup lemon juice. Pour into baked cooled pie shell.

Beat egg whites with 1 teaspoon lemon juice (if used) to soft peaks. Gradually add the 6 tablespoons sugar, beating until stiff peaks are formed and sugar has dissolved. Spread meringue over the hot filling, covering completely. Bake at 350° for 12 to 15 minutes, until golden brown. Cool pie completely before serving.

LEMON SHEET CAKE WITH RASPBERRY WHIPPED CREAM

This is from Erin Jeanne McDowell at The New York Times cooking e-newsletter. Erin begins, "This lovely cake was inspired by the colors and flavors of pink lemonade. Don’t be tempted to skip the first step of this recipe, which asks you to rub lemon zest into granulated sugar: The sugar granules help release the essential oils in the zest, making for a brighter lemon flavor and fragrance. (If you’re really short on time, you can skip using your hands and just mix with the paddle attachment inside the mixer bowl on low speed for 1 minute.) Slather this sunny cake with swoopy, easy-to-make raspberry whipped cream then serve as is, or dressed up with lemon zest or sprinkles."

Ingredients

For the cake:

Nonstick cooking spray

2 cups granulated sugar

3 lemons, zested (about 5 tablespoons), plus 1/3 cup lemon juice (from about 2 lemons)

4 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon fine sea salt

1/2 cup unsalted butter (1 stick), at room temperature

1/2 cup vegetable oil

6 large eggs, at room temperature

1-1/4 cups buttermilk, at room temperature

For the frosting:

12 ounces (about 2-3/4 heaping cups) raspberries (thawed, if frozen)

3/4 cup granulated sugar

1-1/2 cups heavy cream

Lemon zest or sprinkles, for finishing (optional)

Preparation

Heat the oven to 350 degrees. Lightly grease a 9-by-13-inch pan with nonstick spray, then line the pan with parchment paper. Lightly coat the parchment paper with nonstick spray.

In the bowl of an electric mixer, use your hands to rub together the sugar and lemon zest.

In a medium bowl, whisk the flour, baking powder and salt.

Add the butter and oil to the bowl with the lemon sugar, and transfer it to the mixer. Using the paddle attachment, cream the mixture on medium speed until light and fluffy, 4 to 5 minutes. With the mixer running, add the lemon juice in a slow, steady stream and mix until well combined, 1 minute more. Scrape the bowl well.

Add the eggs one at a time, mixing on medium speed until each is incorporated before adding the next, about 1 to 2 minutes each. Scrape the bowl well every two to three additions.

Add half of the flour mixture and mix on low speed until fully incorporated. With the mixer running on low speed, add the buttermilk in a slow, steady stream, and mix until fully incorporated. Add the remaining flour and mix until it’s evenly incorporated.

Pour the batter into the prepared pan and spread into an even layer. Transfer to the oven and bake until a toothpick inserted into the center comes out clean, 27 to 32 minutes. Cool completely.

While the cake cools, make the frosting: In a medium bowl, mash the raspberries with a potato masher or large fork until broken down. Stir in 1/2 cup granulated sugar, and let macerate for 10 to 15 minutes.

Strain the raspberry mixture. (You should have at least 3/4 cup juice. Reserve any excess for cocktails, stir it into sparkling water, or drizzle over ice cream.)

In the bowl of an electric mixer fitted with the whisk attachment, whip the cream and the remaining 1/4 cup granulated sugar on medium speed until the mixture reaches soft peaks, about 1 to 2 minutes.

With the mixer still running on medium speed, pour the raspberry juice into the mixer in a slow, steady stream. (Reduce splattering by pouring away from the moving whisk.) Continue to whip until the mixture forms peaks, about 30 seconds to 1 minute more.

Spoon the frosting over the cooled cake and spread into an even layer. If desired, garnish with lemon zest and sprinkles.

CREAMY LEMONADE PIE

This comes from a long-since-forgotten-emailing-list.

Ingredients

1 (5 oz) can evaporated milk

1 (3.4 oz) pkg. instant lemon pudding mix

2 (8 oz) pkg. cream cheese softened

3/4 C. lemonade concentrate

1 graham cracker crust

Directions

In a mixing bowl combine milk and pudding mix; beat on low speed for 2 minutes. In another mixing bowl, beat cream cheese until light and fluffy, about 3 minutes. Gradually beat in lemonade concentrate. Gradually beat in pudding mixture. Pour into crust. Cover and refrigerate for at least 4 hours.

ITALIAN LEMON COOKIES

Ingredients

1/2 cup light butter

2 tablespoons vegetable oil

3/4 cup Splenda No Calorie Sweetener, Granulated

1 tablespoon vanilla extract

1/4 cup egg substitute

3 tablespoons lemon juice

1 tablespoon grated lemon zest

1-1/2 cups all-purpose flour

1/4 cup cornmeal

1 teaspoon baking powder

1/8 teaspoon nutmeg

Directions

Preheat oven to 325 degrees F. Lightly oil a cookie sheet and set aside.

Blend together butter, Splenda Granulated Sweetener, and vanilla in a medium sized mixing bowl until butter is softened. Add egg substitute, lemon juice and zest. Mix briefly. Add flour, cornmeal, baking powder and nutmeg. Mix using a hand mixer on low speed (or by hand) until dough is formed. Do not over mix.

Remove dough from bowl and divide in half. Roll each half into a log approx. 1 inch thick in diameter. Cover with plastic wrap and freeze 1-2 hours, allowing dough to chill and become firm.

Remove dough from freezer, unwrap and cut into slices approximately 1/4 inch thick. Place cookies on prepared cookie sheet.

Bake in a preheated 325 degrees F oven 8-10 minutes or until lightly browned.

Notes:

These delicate lemon cookies have excellent flavor and an interesting texture. They are perfect for adding variety to a cookie tray.
