Blueberries

BLUEBERRY CRUMBLE

This is from the Food Network. Prep Time: 20 minutes; Inactive: 10 minutes; Cook Time: 30 minutes; Total Time: 1 hour; Yield: 6 to 8 servings; Level: Easy

Ingredients

Filling:

1 teaspoon unsalted butter, softened

2 pints blueberries, or any other berry

1/2 cup granulated sugar

1 tablespoon cornstarch

1/2 cup apple cider or orange juice

1 teaspoon vanilla extract

Streusel Topping:

1 cup all-purpose flour

1/2 cup brown sugar

1/2 cup granulated sugar

6 tablespoons unsalted butter, cold and cut into cubes

1/2 cup toasted oats

1/2 cup chopped, toasted almonds

Directions

Preheat the oven to 375 degrees F. Lightly butter an 8-inch square baking dish.

For the filling: In a bowl, add the blueberries, sugar, cornstarch, cider, and vanilla, Carefully mix the ingredients together with a spatula, leaving the blueberries whole. Set aside while you assemble the topping.

For the topping: In the bowl of a mixer, add the flour, sugars, and butter. Using the paddle attachment, incorporate the butter into the dry ingredients until the mixture looks mealy or crumbly. (This can be done by hand.) Stir in the oats and nuts.

Pour the filling into an 8-inch square baking dish and evenly distribute the topping over the fruit. Bake for 30 minutes, or until the topping is golden brown and the fruit is bubbling. Cool slightly and serve warm.

BLUEBERRY COBBLER

This was posted on the Vegetarian Times web site on MAY 1, 2017, and is from the June 2016 issue (page 35). It begins, “You can mix and match fruits for different fillings.”

Note: The website was missing part of two of the topping ingredients (the “2 Tbs. sugar, plus more for sprinkling, if desired” and “1 cup full-fat canned coconut milk, plus 2 Tbs. for brushing top”). Fortunately, I had a June 2016 issue of Vegetarian Times next to me when I pulled this up from the website.

Ingredients

Filling

1/2 cup sugar

3 Tbs. cornstarch

1⁄8 tsp. salt

6 cups (2 lbs.) blueberries, fresh or frozen and thawed

1 tsp. melted margarine or coconut oil, optional

Topping

1/2 cup white or brown rice flour

1/2 cup sorghum or oat flour

1/2 cup tapioca starch

1/4 cup cornstarch or potato starch

2 Tbs. sugar, plus more for sprinkling, if desired

1 Tbs. baking powder

1/2 tsp. salt

1 cup full-fat canned coconut milk, plus 2 Tbs. for brushing top

3 Tbs. turbinado sugar

Preparation

Preheat oven to 375˚F.

To make Filling: Whisk together sugar, cornstarch, and salt in large bowl. Add blueberries and margarine or oil, and stir to coat. Set aside.

To make Topping: Whisk together rice flour, sorghum or oat flour, tapioca starch, cornstarch or potato starch, sugar, baking powder, and salt in large bowl. Stir in coconut milk. Let stand 10 minutes, until dough firms into spongy consistency.

Spread Filling in 2-1/2 - to 3-quart baking dish. Scoop 1⁄4 -cup dollops of Topping over Filling with ice-cream scoop, leaving space between each dollop. Brush dollops with coconut milk; sprinkle Topping with turbinado sugar. Bake 1 hour, or until Filling is thick and bubbly and Topping is golden brown. Cool 15 minutes before serving. Serve warm.

OH-SO-BLUEBERRY ICE

This comes from Vegetarian Times (July/August 2005 issue, page 62), and begins, "Serve with dairy-free vanilla ice cream - yum!" Makes 6 servings

Ingredients

1 16-oz. pkg. frozen blueberries, thawed, or 2 cups fresh blueberries

1/4 cup sugar

1/4 cup lemonade concentrate, thawed

1-1/2 cups ginger ale

Preparation

Bring blueberries, 1/2 cup water and sugar to a boil over medium heat. Cover, simmer 5 minutes; let cool. Purée mixture, then stir in lemonade and ginger ale. Pour in 9×9-inch baking pan; freeze 1/2 hour. Remove; scrape ice crystals into mixture. Refreeze. Scrape every 20 to 30 minutes.

Mound slush into 6 dishes; serve.

MELT-IN-YOUR-MOUTH BERRY TRIFLE

This is from September 2006 issue of Vegetarian Times (page 85), and begins, "Even though you can use fresh berries in this trifle, frozen work better because they give off more juicy goodness for the chunks of pound cake to absorb." Makes 16 servings

Ingredients

2 10-oz. bags organic frozen strawberries, thawed

2 10-oz. bags organic frozen blueberries, thawed

1/2 cup sugar

1/4 cup lemon juice

3 cups low-fat vanilla yogurt

2/3 cup low-fat sour cream

1 tsp. vanilla extract

1 16-oz. fat-free pound cake

1 cup raspberry jam

Preparation

Toss together strawberries, blueberries, sugar and lemon juice in large bowl. Combine yogurt, sour cream and vanilla in separate bowl.

Stand pound cake on side. Cut cake into 4 thin slices lengthwise. Spread first slice with 1/4 cup jam, and top with second slice. Continue with remaining slices and jam, and finish with layer of jam on top of cake. Cut into 1/4-inch-thick slices.

Line bottom and sides of clear trifle dish or large glass soufflé dish with prepared cake slices. Spoon in half of fruit. Top with half of yogurt mixture. Layer with remaining cake slices, fruit and yogurt mixtures. Cover with plastic wrap, and chill 4 hours, or overnight, to allow trifle to set.

WILD BLUEBERRY ICE CREAM POPS

Ingredients

1 cup frozen Wild Blueberries

1 ounce milk chocolate chips

2 cups fat-free vanilla frozen yogurt, softened slightly

Materials: small wooden or plastic pop sticks

Directions

Thaw Wild Blueberries and puree.

In a bowl, combine pureed Wild Blueberries, chocolate and frozen yogurt. Mix thoroughly.

Rinse 6 standard muffin cups with cold water and spoon in Wild Blueberry mixture, dividing it evenly between the cups (silicone muffin cups need not be rinsed first).

Place a stick in the center of each "muffin" and freeze until firm, at least 2 hours.

BLUEBERRY CORNMEAL SHORTBREAD TART

This is from Alison Roman in The New York Times cooking newsletter. Alison wrote, "Part tart, part crumble, this blueberry shortbread is an excellent way to use up as many blueberries as you can get your hands on. The exposed surface allows the fruit to cook down, thickening and getting jammy with just a little bit of flour to help it along. It’s ideal for baking, slicing and bringing to any and all outdoor gatherings, or serving at home with a ridiculous amount of vanilla ice cream."

Yield: 8 to 10 servings; Time: 50 minutes

Ingredients

For the crust and topping:

1-1/2 cups all-purpose flour

1/3 cup cornmeal

1/3 cup confectioners’ sugar

1/4 cup light brown sugar

1 teaspoon baking powder

3/4 teaspoon kosher salt

3/4 cup unsalted butter (1-1/2 sticks), melted and cooled slightly

For the filling:

1 pound blueberries

1/2 cup light brown sugar

2 tablespoons apple cider vinegar or fresh lemon juice

2 tablespoons all-purpose flour

Small pinch of kosher salt

Preparation

Heat oven to 350 degrees.

Make the crust and topping: In a medium bowl, whisk together flour, cornmeal, confectioners’ sugar, brown sugar, baking powder and salt. Add melted butter, then use your hands or a wooden spoon to combine ingredients until no dry spots remain.

Press half of the cornmeal mixture into a 9-inch tart pan with a removable bottom (alternatively, use a 9-inch cake pan or springform pan, lined with parchment), making sure the mixture is evenly pressed on the bottom and about 1/2 inch up the sides. (Using something large and flat, like the bottom of a measuring cup, will be helpful.) Reserve the remaining mixture.

Make the filling: Toss blueberries, brown sugar, vinegar, flour and salt together in a medium bowl. Pour the fruit into the crust.

Crumble the remaining cornmeal mixture over the blueberries, pressing bits of the mixture together into large clumps as you go, as you would with a crisp or coffee-cake topping.

Bake tart until the blueberry filling is bubbly and thickened, and both the crust and top are nicely browned, 40 to 45 minutes.

Let tart cool completely before slicing into triangles and serving. The tart can be baked up to 2 days ahead and stored tightly wrapped at room temperature or refrigerated (especially if your kitchen is hot or humid).
