QUICK VEGAN CROCK POT APPLE CRUMBLE

This comes from Jolinda Hackett, who wrote for The Spruce Eats. Jolinda wrote, “A quick and easy recipe for a vegan apple crumble (just like an apple crisp, if you prefer!) that you can make in your crockpot or slow cooker. Make sure to read the ingredients of whatever kind of granola you use, as many are not vegan.

“Refined sugar-free and vegan, this apple crumble or apple crisp recipe takes just minutes to prepare. It's made from fresh sliced apples sweetened with a bit of maple syrup (use real maple syrup, not bottled flavored corn syrup!) and topped off with a crumble granola, cinnamon and nutmeg topping. Using granola for the top of this apple crumble means that there's no bowls to get dirty and nothing to mix. Just sprinkle everything over the top of your crock pot or slow cooker.

“Like waking up to a hot and delicious breakfast or coming home to a sweet dessert already ready to go? You might also want to try this recipe for crockpot peach cobbler or scroll down for a few more vegetarian and vegan crockpot recipes including a few desserts.

“Enjoy!” Prep Time: 20 minutes; Cook Time: 480 minutes (8 hours); Total Time: 500 minutes; Yield: about 4 servings.

CRANBERRY PEACH COBBLER

As promised this also comes from Jolinda Hackett. Jolinda wrote, “Crock Pot Cranberry Peach Cobbler makes for a sweet breakfast treat or a light dessert. The cranberries add texture and color, making for a vibrant and tasty recipe. Serve your crockpot peach cobbler recipe plain or with a dollop of whipped cream. This recipe is both vegetarian and vegan.”

Unfortunately, I'm no longer able to find a working link for this. When about.com (where Jolinda, and many other wonderful cooks posted) morphed into .dash (dotdash), which The Spruce is part of, many of the recipes and their links didn't follow.

CHOCOLATE CHIP PUMPKIN BARS

This is from Kariely Tillman on OneGreenPlanet. Kariely wrote, “These chocolate chip pumpkin bars are perfect if you love the pumpkin and chocolate combination. It would be safe to say it runs a close second only to the peanut butter and chocolate combination. Not only do these bars have a chocolate crust, but a creamy pumpkin filling loaded with chocolate chips. And best of all … they’re healthy and super easy to make! You can have them mixed up and in the refrigerator to firm up in less than 10 minutes using only a food processor.”

These are gluten-free, with no refined sugar, an are also listed as paleo vegan and vegan. Serves 14 - 16.

Ingredients

For the Crust:

2 cups pecans

1/4 cup raw cacao powder

4 Medjool dates, pitted

1 tablespoon coconut oil

For the Bars:

1 cup pumpkin purée

1/2 cup cashew butter

1/2 cup coconut flour

4 Medjool dates, pitted

1 tablespoon coconut oil

1 teaspoon vanilla bean powder

1/4 teaspoon ground nutmeg

2 pinches ground cloves

1 cup vegan mini chocolate chips

Preparation

To Make the Crust:

Add all ingredients for the crust to a food processor and process until it is well blended and has a crumbly texture.

Remove and spread evenly in an 8x8-inch baking dish and press down firmly.

Set aside.

To Make the Filling:

Add the cashew butter and dates to a food processor and process until creamy and well blended.

Add the remaining ingredients (except the mini chocolate chips) to the food processor and process until well blended.

Transfer the mixture to a medium sized bowl and gently stir in the mini chocolate chips by hand.

Add the mixture on top of the crust and spread evenly.

Put it in the refrigerator for 30-60 minutes, or until it becomes firm.

Store in the refrigerator until ready to serve because it will get soft and lose it's shape if left out at room temperature.

Notes:

Feel free to adjust the pumpkin spices (nutmeg, clove, vanilla) to your preference.

LEMON BLUEBERRY SORBET

This is from the infamous long-since-forgotten emailing list. Yield: 4 servings.

This begins, “Lemon verbena enhances the lemon flavor of this blueberry sorbet. The rum is optional. The recipe calls for frozen blueberries, so you can make it year-round.”

2/3 cup granulated sugar

1/3 cup whole lemon verbena leaves

1 bag frozen blueberries (14 to 16 ounces)

1/3 cup fresh lemon juice

2 Tablespoons lemon-flavored rum (optional)

Put sugar & lemon verbena in food processor & process 30 seconds. Add frozen blueberries & process 1 minute.

With the processor on, pour lemon juice & rum, if using, through feed tube; process until smooth.

Serve sorbet immediately, or transfer to a covered bowl & keep in freezer (soften slightly before serving, if necessary).

5-MINUTE FUDGE BROWNIES

This is from Vicky at Food Talk Daily. Vicky wrote, "These are my absolute favorite brownies! The title is a tad misleading, but I'll explain.

"It simply means that it only takes 5 minutes to mix this batter up from scratch and get it in the oven! How simple is that? It’s just as quick and easy as a box mix and I can guarantee you it’s a whole lot tastier and healthier! Now you know I’m no health nut, but have you ever glanced at the ingredients on a box of brownies from the store? Its crazy!!!

"This recipe only has 9. BIG difference! I do not buy snacks for my kids, instead I homemake them. It’s so much healthier, but also so much cheaper. Being a family of 8, and I stay at home, we are on a strict food budget. My kids get to enjoy fresh homemade snacks throughout the week. You may be thinking I only have the time because I do stay at home. I can assure you I’m rather busy, young twins are a full time job alone!!

"Once you taste these you won't worry about being out of the boxed version every again!"
