Thursday Desserts
Today's yummy desserts don't necessarily have a theme (unless you consider decadently yummy desserts to be a theme). Today's offerings include Chocolate Peppermint Bars, Dense and Delicious Chocolate Cake, and Soft and Chewy Gingerbread Men. Oh, my, where to start?! Except to state the following: Enjoy!
BLACKBERRY ICE CREAM
This comes from the One Green Planet emailing list. They have quite a few really good vegetarian recipes. Give it a try!
This recipe starts off, “I served my ice cream as a soft serve, but I also froze it in an airtight container and it turned to the same consistency as the ice cream you knew/know and love/d as a non-vegan. I won't lie; this ice cream is not as creamy as the dairy kind, or the soya or nut-based ice cream you can buy from health food stores, but the banana makes this more than just a sorbet. Not to mention, it cuts the calories by half. At least. So enjoy your 'ice cream' guiltlessly! You have my permission.”

Ingredients
2 cups frozen blackberries
2 frozen bananas, in chuncks
a few splashes of almond milk
Preparation
In a blender or food processor, blend the frozen fruit with a little bit of almond milk, adding the milk little by littled. Don't add too much or you'll just end up with a frozen smoothie, you want to add just a few splashes when necessary. Depending on the speed of your blender or food processors, this will take about five minutes. You may need to stir the ice cream mixture with a spoon between pulsing to make sure everything gets blended (unless you want chunks).
Serve immediately as soft serve, or place in a container in the freezer for at least one hour before scooping it out.
CHOCOLATE PEPPERMINT BARS
This is from Melissa Clark in The New York Times cooking e-newsletter, and begins, “A little-known fact: Creamy chocolate-covered peppermint patties are not hard to make at home. Here, the minty filling and chocolate coating are layered onto a cocoa-imbued shortbread base, which adds a cookie crunch to each bite. These keep well, so you can make them a week ahead; store airtight at room temperature. They also freeze well. The coconut oil makes the chocolate coating slightly shinier and a little more brittle in a good way, so use it if you have it. But if you don't have it on hand, you can omit it.”
Yield: 36 squares; Time: 1 hour 10 minutes, plus chilling.

Ingredients
For the Chocolate Shortbread:
1 cup all-purpose flour
1/2 cup granulated sugar
2 tablespoons unsweetened cocoa powder
1/4 teaspoon kosher salt
8 tablespoons unsalted butter (1 stick)
For the Peppermint Filling and Chocolate Top:
3 1/4 cups confectioners’ sugar
3 tablespoons unsalted butter, softened
1/4 cup heavy cream
2 1/4 teaspoons peppermint extract, or to taste
9 ounces bittersweet chocolate (at least 60 percent cocoa solids), chopped
1/2 teaspoon coconut oil (optional)
Preparation
Heat oven to 325 degrees. Line a 9-inch-square baking pan with parchment paper, allowing 2 inches of paper to hang over the sides.
Make the shortbread: In a food processor, pulse together flour, sugar, cocoa powder and salt. Add butter and process until a smooth dough forms. Press dough evenly into the bottom of prepared baking pan. Bake until firm to the touch, and sides of the crust are beginning to pull away from the pan, about 25 minutes. Cool completely.
Make the filling: In a mixer fitted with the paddle attachment, combine confectioners' sugar, butter, cream and peppermint extract. Beat until mixture forms a thick, smooth paste. Press filling evenly over shortbread. Chill to set the filling for at least 1 hour and up to overnight.
Use parchment paper overhang to lift the shortbread and peppermint out of the baking pan and onto a cutting board. Cut into 1 1/2-inch squares (there should be 36 squares). Place squares on a rack placed over a parchment-lined sheet tray, and let them come to room temperature for about 15 minutes.
In the top of a double boiler or in a heatproof bowl set over a pan of simmering water, melt 7 ounces chocolate, stirring occasionally, until smooth. Remove from heat, add remaining 2 ounces chocolate and let sit for 2 minutes.
Add coconut oil, if using, and stir the chocolate until smooth. Spoon 1 teaspoon chocolate on top of a cut peppermint square, using the back of the spoon to spread chocolate to the edges. Be sure to fully cover the top of the square with chocolate. (Leave the sides exposed, though it's O.K. if some of the chocolate drips down.) Repeat with remaining squares.
Let squares sit at room temperature until chocolate is set, at least 1 hour.
CHOCOLATE CHIP PUMPKIN BARS
This is from Kariely Tillman on OneGreenPlanet. Kariely wrote, “These chocolate chip pumpkin bars are perfect if you love the pumpkin and chocolate combination. It would be safe to say it runs a close second only to the peanut butter and chocolate combination. Not only do these bars have a chocolate crust, but a creamy pumpkin filling loaded with chocolate chips. And best of all … they’re healthy and super easy to make! You can have them mixed up and in the refrigerator to firm up in less than 10 minutes using only a food processor.”
These are gluten-free, with no refined sugar, an are also listed as paleo vegan and vegan. Serves 14 - 16.

For the Crust:
2 cups pecans
1/4 cup raw cacao powder
4 Medjool dates, pitted
1 tablespoon coconut oil
For the Bars:
1 cup pumpkin purée
1/2 cup cashew butter
1/2 cup coconut flour
4 Medjool dates, pitted
1 tablespoon coconut oil
1 teaspoon vanilla bean powder
1/4 teaspoon ground nutmeg
2 pinches ground cloves
1 cup vegan mini chocolate chips
Preparation
To Make the Crust:
Add all ingredients for the crust to a food processor and process until it is well blended and has a crumbly texture.
Remove and spread evenly in an 8x8-inch baking dish and press down firmly.
Set aside.
To Make the Filling:
Add the cashew butter and dates to a food processor and process until creamy and well blended.
Add the remaining ingredients (except the mini chocolate chips) to the food processor and process until well blended.
Transfer the mixture to a medium sized bowl and gently stir in the mini chocolate chips by hand.
Add the mixture on top of the crust and spread evenly.
Put it in the refrigerator for 30-60 minutes, or until it becomes firm.
Store in the refrigerator until ready to serve because it will get soft and lose it's shape if left out at room temperature.
Notes:
Feel free to adjust the pumpkin spices (nutmeg, clove, vanilla) to your preference.
CHOCOLATE-PEANUT BUTTER CUP PIE
Years ago, I was on a number of recipe exchange emailing lists. One of the emailing lists had mainly Weight Watchers recipes. This one was listed with a Points value of 6.
Anyway, this recipe begins, “Layers of chocolate ice cream, hot fudge topping, and peanut butter cups fill a chocolate cookie crust in this heavenly four-ingredient dessert. It's no wonder this pie received our Test Kitchen's highest rating and became a staff favorite.”
Prep time: 13 minutes; Other: 6 hours
Ingredients
4 cups no-sugar-added chocolate ice cream
1/2 cup chopped miniature peanut butter cups (about 11 candies), divided
1 (6-ounce) cream-filled chocolate sandwich cookie pie crust (such as Oreo)
1/4 cup fat-free hot fudge topping
Directions
Let ice cream stand at room temperature 5 minutes or until slightly softened.
Combine ice cream and 1/4 cup chopped candy in a large bowl. Spoon ice cream mixture into bottom of pie crust. Sprinkle remaining 1/4 cup candy over top. Cover and freeze at least 6 hours or until firm. Drizzle each slice with hot fudge topping. Yield: 8 servings (serving size: 1 slice and 1 1/2 teaspoons hot fudge topping).
DENSE AND DELICIOUS CHOCOLATE CAKE
This is from the October 2006 issue of Vegetarian Times (page 31), and begins, “Wow the chocolate lovers in your life with this fudgy creation that’s as easy to whip up as a cake mix.” Makes 10 servings.

Chocolate Cake
1 cup all-purpose flour
1 cup sugar
1/2 tsp. baking soda
1/4 cup low-fat buttermilk
1 large egg
2 tsp. vanilla extract
1/2 cup brewed espresso or strong coffee
1/2 cup cocoa powder
1/2 cup (1 stick) unsalted butter, cut into small pieces
Fudge Glaze
2 Tbs. low-fat buttermilk
2 Tbs. cocoa powder
2 Tbs. unsalted butter
1/2 cup confectioners' sugar
1 tsp. vanilla extract
Preparation
Preheat oven to 400F. Coat 9-inch round springform pan with cooking spray. Combine flour, sugar, and baking soda in bowl. Whisk together buttermilk, egg, and vanilla in separate bowl.
Combine espresso and cocoa in large saucepan. Add butter, and bring to a boil over medium-high heat, whisking constantly. Remove from heat, and stir in dry ingredients. Add buttermilk mixture, and whisk until smooth.
Pour batter into prepared pan, and bake 15 to 20 minutes, or until top looks dry but toothpick inserted in center comes out moist.
Meanwhile, make Fudge Glaze: Combine buttermilk, cocoa powder, and butter in medium saucepan, and bring to a boil, stirring constantly. Remove from heat, and stir in sugar and vanilla.
Pierce holes all over cake with skewer or fork. Spread glaze over cake with spatula. Let stand 5 minutes before unmolding, and serve.
SOFT & CHEWY GINGERBREAD MEN
This comes from Audra, on her wonderful site The Baker Chick. Adapted this recipe from Baking Illustrated, this recipe makes about 30 3-inch cookies.

Ingredients
3 cups all-purpose flour
3/4 cup dark brown sugar
1 tablespoon ground cinnamon
1 tablespoon ground ginger
1/2 teaspoon ground cloves
1/2 teaspoon salt
3/4 teaspoon baking soda
3/4 cup (6 ounces) unsalted butter, cut into 12 pieces and softened slightly
3/4 cup molasses
2 tablespoons milk
Instructions
In food processor workbowl fitted with steel blade, combine the flour, sugar, spices, salt, and baking soda and process until combined, just a few seconds.
Add the butter pieces and pulse until mixture is sandy and looks like a fine meal- no big clumps. (This only took about 15-20 seconds.)
With machine running, gradually add molasses and milk; process until dough comes together.
Scrape dough onto work surface; divide in half. Working with one portion of dough at a time, roll 1/4-inch thick between two large sheets of parchment paper. Leaving dough sandwiched between parchment layers, stack on cookie sheet and freeze until firm, 15 to 20 minutes. (Alternatively, refrigerate dough 2 hours or overnight.)
Preheat oven to 350 degrees F. Line two cookie sheets with parchment paper.
Remove one dough sheet from freezer; place on work surface. Peel off top parchment sheet and lay it back in place. Flip dough over; peel off and discard second parchment layer.
Use cookie cutters to cut dough into men or other shapes. Transfer dough to prepared cookie sheets 1 inch apart.
Gather scraps and chill while you cut out the second sheet of dough. You can keep re-using the scraps, but may need to add some flour and continue to chill the dough. If the dough gets really soft, freeze the whole sheet for 10 minutes before baking.
Bake cookies 8 to 11 minutes or until the edges are set- do not overbake. Cool cookies on sheets 2 minutes, then cool on a wire rack.
Decorate with icing once cooled!
